Great video! My family is Peruvian and we make this a little differently based on recipes passed down from back home. We season the sirloin with salt, pepper, MSG, cumin, spiceless aji panca, and aji amarillo. When it's browned, we take the beef out of the pan (juices included) and put it in a bowl. Then we throw in the onions to soften a bit before adding the beef (not the juice!) back in. After a minute or so, add soy sauce and white vinegar and let it reduce a bit before adding the beef juice back in along with the sliced tomatoes. Once it's done turn off the heat and stir in some chopped cilantro. Serve over rice or french fries! Your version looks delicious too! I'll have to try it out.

This is how i learnt it from friends and family, im from peru myself :) Ive actually never cooked this with alcohol. I only use the red wine vinegar and soy sauce. For more flavour, i marinade the meat, onions and garlic with the vinegar before i stir fry it. Also, for this dish, you need high heat, if you have a propane stove, best kind. Otherwise what happens is your ingredients start to boil instead of getting sauteed. I have also yet to go to a restaurant back home that uses peppers as well in the recipe.

There's a Singaporean/Malaysian dish that stir fried, sweet and sour french fries and luncheon meat(spam). I believe it probably had Hainanese roots. And evolved from the meat and potato stir frys. Into cooks just using pre-cook frozen french fries. Epic comfort food.

I had never heard of Lomo Saltado using alpaca. Lomo usually means Sirloin, and people in the coast tend to assume that's Beef Sirloin. Maybe it's different in the Andes. Chinese immigrants would have probably been most comfortable using beef. Saltado in Spanish translates to saute, which is what stir frying is. You will find that Peruvians are fine serving anything with rice, including other starches such as potatoes and sweet potatoes.

It is usually done with beef tender loin (lomo). Without spring onion, just coriander. Some people ad a little bit of stock when deglacing. Still looks well done, like the dish, not the meat. ;P

Its OK Ben I woiulkd go on a holiday with you :) For your next trip would you be interested in going to Louisiana, USA for creol and cajin cuisine? If you do go head over to Scott, Louisiana for boudin (boo-dan). Scott is the boudin capital and boudin is so amazing you'll never forget it. It's a sausage made with pork, trinity (onions bell pepers and celery) and rice all in a hog casing at its most basic form that is packed with spice and rich flavor but only made and sold in southern parts of Louisiana so it's hard to get it anywhere else without trying to make it or someone taking a trip there (at least to my konowlege). This delicacy is like fried chicken, a billion ways to make it. Now I never been to Louisiana but have had their food and it is amazing. Also I have an uncle from there and he introduced me to boudin when he got back from his trip one year and I fell in love since. And if you like spicy its the best kind in my opinion.

By all means... just make sure it's cooked right through. Whereas beef can be a little pink in the middle... not the same for chicken.
