It’s just so sweet that Branch loves her so much that he would even jump in front of danger with unknown consequences to keep her safe. Also, Cooper is a Prince! And has a twin brother! Well, he's been grey for 20 years. During those 20 years, he's learned to be resourceful, cautious, and skilful. Even though he's happy, giving up his dark hair and grey form would be like giving up a part of him. You can't give away something that makes you who you are. Branch accepted it and chose a different colour. His true colours aren't being insanely happy. But being careful, realistic, prepared, and resourceful while also being caring and kind and sometimes romantic. He's still blue, just in a greyish tone, and you can still see some blue in that dark hair
