Callaloo recipe, (Flaked boiled salted codfish, onion, garlic, scallion, fresh tomato, carrot (for a little sweetness), and the usual dry seasoning. You can fry the seasonings and carrot a little before adding the callaloo. Cut the callaloo a little bigger and cook it a little less. We also use it to make pepper pot soup. Your way looks good too. Oh and we season it up and use it to stuff fish for roasting🤗💕🇯🇲. I see my Guyanese friends getting jealous of the attention you better make them a Guyanese dish Helena😂.

Helena u can cook calaloo with smoke turkey necks also let it dry down a bit when u season it up

Hi Helena. Try releasing the natural flavour of the leaves by rubbing the leaves together until it withers down and the cook it in the same way you would potato greens, or with tomatoes, onions, fresh pepper and mix herbs. You can also cook it the same way you cook cassava leaves with palm oil. I am from Freetowm and we cook these leaves regularly in the three different ways. Please always release the flavour it makes a lot of difference. I once told my Jamaican friend to do this and she loved the different taste. Looking forward to seeing you try one of theses recipes. Compliments of the season my dear. Wishing you a bless and great New Year. We also have it in Sierra Leone, in called Greens in Krio but is a common with the mende and via tribe. Is called hondiee in mende. Is cooked the same way you are doing and we even add tomato paste.

Morning Queendom and a Merry Christmas to you as well. Not just Jamaicans. Guyanese too. My mum and aunt always grew back home in Guyana and in NY as well. Mum would cook it down with onion 🧅, garlic 🧄, tomato 🍅 and dried shrimp 🍤. But she kept it wet. Not necessarily a gravy/sauce but did not cook it down as much of yours. Every now and then with okra. Thanks for sharing. Delish I’m sure.

If u leave the lid off while cooking calaloo but stir often it come out really green. Also it takes less than 10 minutes to cook depending on the hardness of the plant.
