About getting a job before coming to Ghana. It'll mostly have to be in the corporate world. I work in a bank here in Ghana, well, I'm Ghanaian but there are a lot of expat working in my company. You'd have to look up these companies and apply personally. Obviously your academic qualifications from the US will make it very easy for you to get a job here. Interviews are conducted online because of the covid and so yes, you can even get a job before you get into Ghana. Just look up companies online. Send CVS to their HR emails you'd be contacted for interviews and yep, that should be it. You should be fine! And also get a local friend to help you around in your first couple weeks into months, maybe. You should be fine , basically. Great to see that you guys are doing fine. The closest I get to Tema is taking my car over to my mechanic along the Tema mighty beach. Happy holidays guys!

But I remember the first time I met people from Africa I had dumb and stupid questions as well. The media in America have us think that Africans live in trees. When in the town of Alavanyo, near Ho in the Volta region, we visited a place where they were grinding corn. Most was ground to make apele (not sure of the spelling); it was close to what we call polenta. I would imagine one could explain how to grind it to make grits! When this pandemic has passed and we can travel, we'll be in Prampram for a few months. Hopefully, one day we can meet. I'm a retired teacher and found your tour of one of the schools very interesting. Tony, I'll bring you a box of grits!

If you want grits you have to ask for Matokay. That's grits in Uganda at least. I'll bet it's also there in Ghana. There is no seasoning in Matokay. So bring some salt and butter or whatever you like in your grits.

Hey guys, I forgot to mention that you can make your own grits cheaper than you can buy. Order a hand crank corn grinder from Amazon and grind the corn you use to make popcorn. I have actually done this and it does work. I am a long way from home now. In a month when I return home if you need help let me know.

If I understand correctly, grits is coarse ground corn meal (the tough corn not the sweet). There are corn mills everywhere. Can't you just buy some coarse ground corn from a local vendor? Also, I'm pretty sure if you go to any open market you will find coarse ground (probably white) corn. Grit your teeth and bear it ;-) But I doubt local people will know the name grits.

There is plenty of grits in Ghana made from corn. Just like most popular Ghanaian foods grits is also from the Ga people of Ghana and most older Ga people know what it is. Please ask them. They call it “eku egbee mlin”. A relative of Eku egbee mlin that you will also love is called “eyoor”. Not the Ga spelling but phonetically that is how it sounds like. Make sure you ask a Ga person and older.
