I’m able to roll it as then as I wish as my manual pasta maker goes down to a 1 and then I just precut them as I place them in the oven this allows them to be nice and crisp on all sides.. and saves on my arms from all the rolling

How well do these store over several days time frame?

I would say a week or so in air tight container, although we never get to store them! Haha! 😆 they are so great fresh and warm out of the oven!
