While I usually don't eat "breakfast" in the traditional sense of the word, there have been a few times lately where I've been on the go and needed a quick meal I could have grabbed from the fridge to take with me to eat without needing to reheat. So I decided to give overnight oats a try! They are super good and sweetened naturally so there's no added sugar or maple syrup or agave. Recipes listed below!
************************************
BROWNIE
1 cup oats
1.25 cups soymilk
1 tbsp cocoa
½ banana chopped
½ teaspoon cinnamon
CARROT CAKE
1 cup oats
1.25 cups soymilk
1 carrot grated
¼ cup raisins
1 tsp cinnamon
½ tsp vanilla
Pinch nutmeg
LEMON BERRY
1 cup oats
1.25 cups soymilk
1 cup triple berry blend
½ tsp cinnamon
Lemon zest
PUMPKIN PIE
1 cup oats
1.25 cups soymilk
⅓ can pumpkin puree
½ banana chopped
1 tsp cinnamon
½ tsp ginger
½ tsp nutmeg
¼ tsp allspice
¼ tsp clove
OR 2.5 tsp pumpkin pie spice
TROPICAL
1 cup oats
1.25 cups soymilk
½ cup mango
½ cup pineapple
2 tbsp shredded coconut

Instead of plant milk I blend 1 banana with 2 dates and 1 1/2 cup of water and divide between two pint size jars

Personally, I like my overnight oats to be much thicker than what yours looked liked, but I realize that is purely a preference thing. Another good way to sweeten this up with whole foods is to blend the soy milk with the bananas, then add it to the oats. It works great!

I found I like the quart jars better for this too. Yes there are wide mouth pint jars. Love these ideas! Walnuts would be good addition to the carrot cake and pumpkin. Yummm. I'm stuck on blueberry banana date flax right now.

I make apple pie oats..diced granny smith, raisins, dried cranberries, cinnamon is optional, I cook this together with old fashion oats and just water..when ready, I add ground flax, chopped walnuts, sliced almonds, and a teaspoon of maple syrup...you could omit the maple syrup and I'm sure that this could be an overnight oat option but I prefer my oats warm.

I can not get my child to willingly eat oats. I do this: First note; i don't know measurements I wing it to get the desired result. Soak the steel cut oats over night, blend with 5-8 dates, oat milk and or water, chia and or grnd flax seed, cocoa pwder, until super smooth and thickened. I do it until it is steaming my blender inside. Coco 'pudding' for breakfast! Sometimes I add some avocado, for smoothness and if I want to be really fancy with flavour depth a weeeeee bit of nama shoyo and balsamic vinegar a very weee bit.

I'm eating a lot more vegan meals*, and I'll watch "what I eat in a day, vegan" videos, and I'll see many of them eat a big bowl of over night oats. It always SHOCKS me to see them eat the whole thing (with fruit topped on also)as with me, as much as I can put away, I'm feel full for the rest of my life after 1/4 cup of oatmeal. *My husband DOES NOT EVER want to be vegan, and I do, so we compromised; I eat vegan meals at home when he is at work, and make a plant heavy meal with grass fed meat when we eat together. It's been working really well this way :)

The big eaters have eliminated all animal products and all oil. Thats how they can eat so much without feeling sick and while staying slim. During my transition to whole food plant based eating, I was like you. Could not eat much. But, now that I'm well down the road with no animal products, processed food, or oil, I eat all the time. Eg today's breakfast: oatmeal (1/2 cup dry), 1/2 cup strawberries, 1/2 cup prunes, 1/2 cup beans, 3 cups finley chopped salad (greens and purple cabbage), and a dressing made by mixing tomato paste with balsamic vinegar. Plus water and coffee. And, I'll eat again in just a few hours. I'm 5'11 and 145 pounds (well within ideal weight); shorter folks may need fewer calories. But still, the calorie density of whole plants is really low. But, if I eat out and the food has oil, I'm done for the day. I can only eat about a 1/2 meal sized serving and I stay full for 2 meals, and I feel yucky.

PS, when I make oats, I use water not soy milk. That's less fat, so I get to eat more all day and/or I can get my fat in other ways like a spoon of peanut butter as my dessert after dinner ;)

If you want to go hardcore, have porridge as it originated. Add only water (maybe a tiny pinch of salt), bring to boil then simmer for half an hour or more stirring regularly. Serve. 🤣🤣🤣 I know. However if you are trying to get off sugar & salt believe it or not this IS helpful. Porridge is filling & healthy. Dr Esselstyn recommends oatmeal.
