*日本の家庭料理の作り方をアップしていきます*
*第一弾は、大人も子供も大好きなハンバーグです。ジューシーで柔らかいお肉がたまりません*
《材料》大きめのハンバーグ3つ分
・合挽き肉        350g
・パン粉         30g
・牛乳          70ml
・玉ねぎ         大きめのもの2分の1
・卵           1個
◎塩           小さじ1
◎胡椒          お好みで
◎粗挽きブラックペッパー お好みで
◎ナツメグ        小さじ2分の1
《醤油だれ》
◎水           大さじ2
◎酒           大さじ1
◎みりん         大さじ1
◎砂糖          小さじ1
◎醤油          大さじ2
◎ブラックペッパー     お好みで少々
*お肉は使う直前まで冷やしておいて、お肉の温度を上げないように手早くこねるのがジューシーに焼くポイントです*
*炒めた玉ねぎはちゃんと熱が取れてから加えて下さいね*
*蒸し焼きにする際、水を入れた後に一度蓋をしていますが、油がはねるのでカバーをしました。水と酒は同じタイミングで入れてから蓋をして蒸し焼きにしてくださいね*
*ソースを作るのが面倒なときは、ケチャップやぽん酢でも美味しくいただけます*

*分享如何烹煮簡單的日式家庭料理*
*第一個影片是大人小孩都愛的日式漢堡排。如此美味,鮮嫩多汁讓人讚不絕口*
《大個的漢堡排(3個)的主要食材 》
・豬,牛肉碎 350g
・麵包糠 30g
・牛奶 70ml
・洋蔥 半顆
・雞蛋 1顆
◎鹽 1茶匙
◎胡椒粉 依據喜好
◎黑胡椒碎 依據喜好
◎豆蔻粉 半茶匙
《醬料》
◎水 2湯匙
◎料理酒 1湯匙
◎味醂 1湯匙
◎白糖 1茶匙
◎醬油 1湯匙
◎黑胡椒 依據喜好
*訣竅1: 盡量將肉冷卻後才使用,低溫下鍋能讓漢堡排更加多汁*
*炒過的洋蔥降溫後才加入肉裡*
*若覺得醬汁麻煩,也可搭配番茄醬或者日式Ponzu醬*

第一次做漢堡肉,照著影片作 超級無敵好吃,吃起來嫩又不柴,反觀外面連鎖速食店的漢堡肉吃起像橡皮筋 最後醬汁的部分也是很讚,不會太鹹,很清淡 但再加個太白粉或樹薯粉勾芡的話,會更棒

謝謝你的食譜,跟著做了,漢堡排的外皮帶輕微的焦香,而內裡肉質很嫩、熟透但是不會變得乾巴巴。另外我在漢堡排裡包了一小片芝士,切開來,芝士變成半融狀態,配搭起來也很好吃。

@@YaoLam 第二個做法漢堡排的絞肉牛7豬3比例跟住加洋蔥、麵粉、鹽、故椒粉和牛奶進去攪拌然後拍打空氣出來跟住煎 醬汁就用剩下的油、蕃茄醬和豬扒醬攪拌 攪拌完加進漢堡排裏就完成了

In germany this is called frikadellen, you can mix the egg with the spices and breadcrumbs before adding the meat to avoid over working it.

感谢分享,这个配方太赞了,做了两次都是大成功!切开肉饼流出超香的肉汁和油脂,满满的幸福的味道 💖因为做的时候记错了你的步骤,我稍微改动了一下:1)炒洋葱的时候用了鸭油炒(感觉动物油脂会更香);2)煎的时候没有加水和料酒;3)酱汁里酱油改成1勺,糖改成2-3勺,个人感觉偏甜的酱汁更能带出油脂的香气,搭配起来有种相辅相成的感觉。

豆腐やおからなどを入れるヘルシーな和風ハンバーグもあるのですが、これは普通のハンバーグでソースを和風の味付けにしています。作ってみたら是非感想を教えてくださいね。他のレシピ動画も見てもらえると嬉しいです!

@@akari9994 japan has alot of borrowed recipes from europe and western asia especially especially where beef is used. Cows havent been a think in japan that long.

In the USA this is pretty much Meatloaf sometimes made into a patty but mostly a loaf north eastern part here we have a lot of German Heritage here that's probably where it came from

不沾鍋有磨損(會釋出有毒物資)就要更換喔~盡量不要使用金屬用具,較建議木製品。

其實軟質的矽膠更好,耐熱溫度 220 ºC 以內,某些矽膠煎匙甚至宣稱可以耐熱達 315 ºC 的高溫,而矽膠萬一吃下肚是沒問題的,但耐高溫並不是耐火烤要注意 。 ( 電烤爐可以 )

Burgers are based on this reciept which originally were "Hamburger steaks" brought to the US by sailors from Hamburg. The same sailors also brought it to Japan were it survived until now under the original name.

我之前也試過自製日式漢堡排,但內裡總是乾乾的;今次就按照你的製法製作,實在太好吃了,肉汁多而且味道濃郁,我想是豆蒄粉的原故吧,肉質也嫩滑鬆化,實在太開心。感謝你的分享。

I know I'm way behind as far as leaving a comment but your recipe is so similar to my Mom's and Grandmothers. They use flour instead of breadcrumbs, water no milk, salt and pepper to taste, no egg, if you want hamburger steak add onions and bell pepper but you want it as a burger leave onion and bell pepper out. Me and my Dad, Sister and Brother In Law nick named them dough burgers, Mom said she calls them Homemade burgers. I've always asked where they came up with their recipe and they said it was passed down each generation didn't know why except it stretched the meat when you have a big family and can't afford much meat. Enjoyed your videos, just subscribed . Look forward to seeing more!

Greetings from Germany. We have an almost identical dish with the same ground Materials ( sometimes they are a bit different but that is almost for anyones self decision how it should taste in the end) We Call our creation " Frikadelle " Normaly you eat it without a Sauce , often you can buy them in a Bun for on the go, warm or Cold, in supermarkets in different seizes, as Snack and lots of other variatons and so on.. But Great to See this recipe.

This IS literally the German Frikadelle or also called Hamburger Steak, because it originates in Hamburg. The hamburger is also named after the Hamburg Steak. It was invented in America, when likely German immigrants put the Hamburger Steak between a bun and sold it as street food.

So it's not just hamburger, It's like a little fried meatloaf. And the sauce/gravy is far more sweet then I was expecting it to be. My daughter saw hamburg steaks on an anime years ago and had to try it. While she loved my rendition it was a bit more of a Salisbury steak. Thank you for making this video, it was very informative!

我有個問題想問,漢堡肉可以只使用單一的肉來製作嗎?因為家裡本身不吃牛肉,所以我想改成純豬肉,這樣的作法口感上會有差異嗎? 另外,我一直都很想試試在漢堡肉裡加一片起司,有點類似藍帶豬排的作法,但沒有火腿,然後我也想用鮮奶油來代替牛奶,在攪拌肉泥時也加入一點鮮奶油,這樣的做法行得通嗎?

In Germany, where the Hamburg Steak originates (literally named after the city Hamburg), we also call it Frikadelle alternatively.

I suggest to those who wanna make something juicy like this wait a few minutes before eating so that the juices won't leak out as much and it will stay inside the meat giving a better taste

Ok I'm gonna need to remember the sauteed onions, pushing on the center, water and wine to steam the steak, and using what's left in the pan to make the sauce.

I just tried this but the hamburger was too salty, my bad :( The soy sauce has a strong flavour, keep in mind that when putting the condiments! Awesome recipe, ありがとうございます❗

For a gluten free hamburger, substitute potato flakes for the bread which also can be put into the meat directly without soaking in milk.

Where I live we have a dish like that, my mum also puts ham and cheese in it, we put it in breadcrumbs and frie it and eat that with mashed potatoes with fried onions on top 👌🏻😋

It looks the same recipe as bola bola in Philippines. the ingredient for the meat except we add vegetables mix in such as mince carrots and raddish. To top it off why its called "bola bola" its because we form it in sphere. While on the sauce instead of soysauce as the base we add tomato sauce.

肉内的空气如果没清完的话,煎的时候会裂开,如果想要酱汁更濃的话,可以加一些面粉或太白粉(小火,否则面粉会焦)以上建议,谢谢分享食谱的视频。
