You can also try Macunaíma, a cocktail that was created at Boca de Ouro bar at São Paulo. It's being considered a 'new modern classic' and it's just nice and smooth. 45ml white cachaça (slightly aged in neutral wood) 25ml simple syrup 20ml lime juice 7ml Fernet Branca Add everything with loads of ice in the shaker, shake and double strain.

The original rabo de galo glass is something like this one here: www.displal.com.br/copo-dose-caninha-100ml-nadir-3033-p129/ It’s a 100 ml glass with a thick base where you have a mark that indicates how far you should go with the vermouth... the rest is all cachaça. In Uruguay similar glasses were used to drink vermouth with Amarga (our own bitters made with some Italian imported herbs plus some native ones, with little or no sugar at all) in a 2:1 ratio. Another drink that used that kind of small glasses was something pretty close to the Rabo de Galo; the “medio y medio”, meaning literally half and half: equal parts caña (another distillate from the sugar cane but quite different and a lot less “funky” than cachaça) and vermouth. Those traditions are pretty much lost nowadays as people tended to react against what their parents and grandparents used to drink, but they’re actually quite delicious and fairly easy-to-make drinks! since you've done Rabo de galo, what about trying some Maria Mole, it is also a classic from here, i like to drink it after work on any local bar (aka boteco). For anyone interested, there goes the recipe 2 parts of Dreher (a cheap ginger cognac) for 1 of Martini Bianco Each place also does it a bit different, but always on the copo americano (the default brazilian boteco 190ml glass) No ice, just the glass filled to the top with booze, it gets worse each sip, so i like to have it with a nice and cold bottle of beer. I think we could say it's one of Brazil's most "classic" cocktails, but I woudln't call it on of the most popular around here... Even though you can see it in a lot of menus I don't see it getting order all that often. The brazilian variation on the Moscow Mule (with ginger foam instead of ginger beer) and the spanish style of G&T are waaaaay more famous at bars nowadays. But these two are making people more interested in cocktails in general, so that's always a good thing.

Haven't actually went to Spain to try one, but at least here in Brazil it's pretty much a free-for-all when it comes to what bartenders put inside it hahaha

I actually disagree, because Rabo de Galo can be ordered in very simple bars around Brazil (botecos) while Moscow Mule are restricted to 'rich people bars'. That's a fact. So I think that what you're saying has to do with social bubbles.

I couldn't find any hard data on the matter, so I guess we'll have to stick with speculation around our social buubles for now. Let me know if you find anything!

hey! talking from Brazil as well. as you said, everyone has his own Rabo de Galo recipe. I like mine with 2oz of oak aged cachaça and just .5oz of cynar, with a twist of orange. obviously it's more cachaça forward than this recipe, almost like a cachaça old fashioned or something. great video!

The pronunciation is almost perfect. The words "cachaça" and "galo" are spot on, only the R in "rabo" is a wee bit too mexican, but it is understandable. Brazilian's Rs starting a word usually are more throathy, a bit like french's Rs. You can take the sound you make when you say the letter R (without the "ah") and concatenate the rest and would be pretty spot on. Nonetheless, great cocktail (as "rabo de galo" means cock's tail) and great presentation of it's history! []s

I’m really enjoying your channel and, as a Brazilian, there is nothing like seeing our country represented here. Many cocktails mention the Macunaíma (recipe somewhere bellow) and you should make it! For some reason, even in Brazil, cachaça cocktails are not as prevalent and I would love to see more content with it!

Hey Leonardo, you should try BATIDA DE COCO. It’s a very common cocktail here in Brazil. 2oz CACHAÇA 1.25oz COCONUT MILK 0.75oz SWEETENED CONDENSED MILK Shake everything with ice and strain it in a cup with a large cube of ice. Fun fact: you can make your own coconut milk and sweetened condensed milk. COCONUT MILK 2 parts of grated coconut 1 part of water Blend the mixture until it becomes a white liquid, then strain it with a cheesecloth. SWEETENED CONDENSED MILK 1 part of 2% milk 1.5 part of sugar In a pot, boil and stir the mixture until it becomes a uniform cream, then cool it down. Hope you like it.

Carprinha is the most famous of the cocktails in Brazil and Rabo de Galo has always been to me a catch-all term for mixed drinks with wine but you're right about the regional diferences because the country has huge regional diferences, be it in dielect, culinary and this case, drinks..I gotta try this one at home..never heard of or seen Cynar in my life and I live in Rio...just to show how you learn something new everyday

I know what he is feeling, now, my Rabo de Galo also takes use of Cynar and amburana-aged cachaça (Prósa Mineira ouro), but Dolin is expensive, so I use sweet white apple vermouth (Paratini) and some drops of clove bitters.

Dude your descriptions of flavors and spirits are so spot on ... I love all kinds rum and especially that Avua .. and a mix between Rhum Agricole and Jamaican funk rum is the perfect way to describe it.. I work at a rum/ tiki bar in Marco island Florida with over 100 rums and get the pleasure of describing luxurious and intricate rum all the time. I feel solid describing flavors to single guests but when I get on camera I clam up like a fat toad.. anyways kudos for being smooth as butta 🧈

First of all, your pronunciation of cachaça was perfect, Leandro. Aside of your great Portuguese pronounce, from a Brazilian perspective, since I’m Brazilian, the main difference between rum and cachaça is the funk that rum has, it’s got more layers of flavor. Meanwhile, cachaça, despite the fact it is an awesome spirit, it is a pretty straight forward one. When you taste cachaça, the main flavor should be the sugar cane, there is a very present sugar cane punch, which differs from the rum.

I think the "funk" of cachaça is more due to it being traditionally a pot distillate whereas rhum agricole is traditionally a collumn distillate, and less from the wood it's aged in. That certainly explains why it shares that feature with Jamaican rum which is also traditionally a pot distillate.

you had me at Amburana. That stuff is something special. The nose reminds me of baking with my mom - raw pie crust/pastry dough (flour). one night at my favorite bar, I was casually chatting with some ladies sitting adjacent to me when one of them asked the tender if she could get behind the stick and make a drink - she made me a daiquiri with Amburana that was off the charts. Found out later that “Sherry” (who claimed that was her first cocktail she ever made 🙄 ) was kinda a big deal in the local bar/spirits scene. Moral of the story: random surprise daiquiris are a good thing (at least w/ Amburana). And bartenders are goofy creatures.

Isn’t Cachaça pure Pot Stilled as well? I have the Leblon Cachaça and the main difference I get from the Clemet VSOP is the presence of Pear/Plum in the pallet. I’m pretty sure just from tasting the Clemet that it’s blended...

Pronunciation tip, in Brazil the letter R at the beginning of a word is aspirated, so rabo sounds like habo. And the D in de sounds more like dj, as in Django.

So I made this drink with the exact specs and admittedly the flavor profile did not strike me well. I did forget the lime twist and re-watched your video and you speak to the lime being important. I am going to give it another try. I think there was a "funk" flavor that you mentioned that was a little overwhelming in the cachaca. Also this was my first time having cachaca. Go with aged rhum agricole like Clement or Rhum JM. That would be closest to cachaca. Jamaican rum would be good but I’d do the Kingston Negroni spec with Campari and carpano antica vermouth

Cynar is surely cheap here in Brazil, but since smirnoff vodka or mid-range cachaça are around the same price and low end vodka and cachaça cost as little as 3 USD, I doubt anyone is drinking it only because it's cheap alcohol

I'm from São Paulo and the truth about Cynar's popularity here in Brazil is the italian imigrants (we have the biggest italian comunity in the world) demands Vermouths and Amaris when they came to Brazil. The first entrepreneurs rised companies to comply with the tendence mkt. Cinzano, Martini, Cynar was the first ones to raise companies and that gave them popularity. Through next about 60 years it becomes our national companies what provides low prices

If you wanna nail the pronounciation perfectly, some "R" words in Brazil actually sound like the "H" on anglo-saxons originated languages, and on the word "have", for example. So, "Rabo" would be more like "håbo".

Great version, but the one they want to regulate is one of the most basic and popular, which contains 50ml of cachaça, 30ml of sweet red vermouth, scented and decorated with just an orange peel in a glass with a big ice, in order to keep the recipe simple and accessible, helping to popularize cachaça around the world.

I love your videos i watch em almost every cocktail but you mentioned having RDF i dont think thats the case but compared to older videos youve become a bit pretentious which isnt bad it shows your passion and knowledge of the craft but that is my criticism. It should be like bartending to the audience overly friendly with bits of info sprinkled in. Lately it feels like a better than thou attitude. Dont hate bc i love your content i try to learn from it and is inspiring me to start my own channel but im camera shy :(

A little fun fact about this drink is that "Rabo de Galo" is a literal translation of "Cock's Tail" sort of a little word play with Cocktail (or maybe just a mistranslation) :)

That is the second cocktail but no one drinks it, except very poor people in the 70’s. Brazil has to tradition in cocktail making except for caipirinhas. Actually the second brazilian drink is probably a sake caipirinha. So...caipirinha is number one and number 2 and 3.

vai em qualquer boteco de cachaceiro em Sao Paulo e pergunta pro dono quanto ele vende de rabo de galo e quanto ele vende de caipirinha kkk... Muito mais rabo de galo! e tem muito mais desse tipo de boteco do que bar que a classe média/alta frequenta no Brasil.... a gente nao percebe isso pq estamos nessa categoria... e outro detalhe é que caipirinha só existe uma... cachaça, açúcar e limão, isso está decretado por lei (Artigo 68 do Decreto nº 6.871 de 04 de Junho de 2009 - www.planalto.gov.br/ccivil_03/_Ato2007-2010/2009/Decreto/D6871.htm), qualquer variação deveria utilizar outro nome, com isso ela só pode ter uma posição no ranking.

Man it’s not really a cocktail. It’s served in the bar to really drunk people in the long shot glass. Costs less than BLR 3 reais USD 0.50 cents. Few cocktails bars trying to change it but it’s far away to be nice. The you hit the shot glass in the table to mix up and drink only in once

Great job. Double L is the y sound (Gallo=gayo). Single L is a hard L sound.
