Avoiding the risk of injury these days doesn't overweigh the loss of sensory connection between the driver and the car. Controlling the cars remotely would cost a lot of money and still be vulnerable to signal loss or glitch, which would render a car a deadly and destructive projectile with little to no strategy of minimizing damages. Sure it can be done, but the investment isn't worth it at this point. The chance of injury in racing is also an important motivator for fairplay and clean racing.
