Not only is the host terrible, it's also scientifically wrong. Even cast iron skillet manufacturers themselves say that the skillets themselves and the seasoning don't damage as easily as what most people think; just use water and soap, wash with non-abrasive sponge just like any other pan (and use a scrapper if necessary), dry thoroughly with a cloth (this is the only important part since water is cast iron's biggest enemy), rub a thin layer of oil and heat the skillet for a minute or two. The seasoning itself isn't just a coating of fat, it's polymerised fat which soap won't do jack to, and on the contrary it would actually take quite a bit of effort to strip it. The kosher salt? It's not a bad idea on its own if you have stubborn chunks sticking to the skillet, but it's no better than using an abrasive scour so just use those to save yourself from the trouble of pouring salt into it every time. Lodge themselves (manufacturer of the skillet used in this demo) even has instructional videos which clearly show them recommending soap, water, scraper and finishing it with a thin coat of oil. The no-soapers can stay in their own camp all they want but I'll stick to soap.

John Smith you don’t have to do all of that complicated stuff. Just scrap the gunk off and rinse the pan with hot water, and put it on the stove top until all the water is dried off, and then rub just A LITTLE bit of oil on the inside of the pan, and put it back on the stove burner until the oil dries up. BOOM all done

If there's any stuck on bits I typically heat the pan up, use a little salt and hot water. A light/gentle scrubbing with a non-abrasive pad. Then I heat it up on the oven to dry it off and use a light coating of oil.

I use water, scub with a plastic brillo pad, sometimes with salt add for scouring but rarely need it, then rinse and dry immediately, heating and oiling on stove afterward. Never had a problen with rust. Woks are the easier ones to f up in my experience, and I salt scrub those more often and reseason them practically every time. Making popcorn in it is a fun way to do that.

@DParkerInTheWoods
@DParkerInTheWoods 5 жыл бұрын
That's a waste of salt and potatoes. Wash wish dish soap like you would anything else. And you're not "reseason"ing it. You're just smearing on some oil/fat. "Seasoning" involves building up thing layers of polymerized oils by using high heat,which breaks them down chemically, after which they recombining after cooling into said polymers.
@rickeys
@rickeys 6 жыл бұрын
According to Lodge (and my personal experience), it's perfectly fine to use soap and water to clean your cast iron. You HAVE to re-season it afterwards, though. I dry it with a paper towel, put some vegetable oil on it, and put it in a cold oven. I then set the oven to 350F, and when it's up to temp, turn it off to cool. Perfect job every time. I use dry Kosher salt for routine cleanups, rubbed in with a dry paper towel.
@Chance57
@Chance57 6 жыл бұрын
Soap won't mess with your seasoning. Once the lipids have been polymerized they are no longer available to bond with the hydrophobic ends of the soap molecules. There's no fact based or scientifically sourced evidence behind not using soap. Personal anecdotes need not be spread like gospel if there's nothing to it.
@DParkerInTheWoods
@DParkerInTheWoods 5 жыл бұрын
@Nathan B Stop spreading that "no soap in cast iron" bullshit. It isn't 1895 anymore, and nobody's using lye soap to wash their dishes. Modern dish soap is very mild and does no harm at all to cast iron seasoning. And if your pans are "sticky" it's because you don't have any actual "seasoning" (a hard plastic-like coating of polymerized fats). You just have grease.

I don't think either of them have ever cleaned a cast iron pan before. I use a chainmail scrubber and warm water, but modern dish soap is fine. It was the old lye containing soaps of long ago that ate the seasoning. If you do use salt, use a paper towel to scrub with. Who uses a spatula?

Hate to inform this person but you can use metal tools and soap with/or water all you like - HUGE BLOODY MYTH. The science behind it is the fats polymerize to the surface under heat at a molecular level. In laymans terms hot fats turn into a hard slick bonded layer. Do your job right the only way you're getting it off is a 500 F oven and a few hours. Of course thats after what I call the "teen" period where the coating is a bit fickle and thin, but after lots of use its darn durable

Boy these people waste a lot of salt. And end up with a dirty pan. When the cast iron pan is still hot, get your hot water tap hot and then put hot water in the hot pan. You might need a moment with the stainless steel mail scrubber, but the pan for the most part will be clean. HOT!
@dservez
@dservez 4 жыл бұрын
Uh. Yeah... you can use some water when cleaning cast iron, as it helps lift the baked on stuff, but make sure it’s a hot or warm pan and hot water. Mix it with the salt and it’ll help scrape off cooked on stuff, just make sure the water is completely evaporated by putting it back on the grill, stove top, or oven. Put the thin layer of oil on the hot pan after it’s clean, not with salt and built on crap all over it.

I gave this a thumbs down for misinformation! The people still don't get it. I have learned from other videos that properly seasoned cast iron cannot lose that layer of protection just using soapy water. The seasoning oil and cast iron form a strong layer...that oil has "polymerized" so I've learned and soap will not dissolve it, unless you use force with harsh scrubbers instead of a soft sponge.

I happen to agree with the concept. I simply insist on cleaning the skillet while it is still hot rather than at a cold state. I will put it back on the burner with water if there is a significant amount of caked in food. I then rinse it with hot water and put it back on the burner to let it dry. If the seasoning in the pan is good, I don't need to add the oil every time off the burner. I only do that on an as-needed basis. When I need to renew the seasoning of the cast iron, I put it in the oven coated with a thin layer of oil.

Unless youve used some abrasive cleaner and SOAP on it, the food will wipe right out. Cast iron is like teflon unless youve ruined your pan. Anything I have cooked comes right out of the pan. You just salt, wipe and it is clean.
