When you boil the water and mix in sugar, you create a saturated solution of sugar; that is, you add more sugar than the water can accomodate. The heat increases the solubility of the water+sugar mixture. What happens is that once you let the mixture cool, it becomes very unstable as it is saturated with sugar molecules and it no longer has the heat to help it remain in a saturated state; so when you give it sugar crystals, the solution uses these as a sort of stepping stones to begin forming crystalized structures. The salt+ice method is what we all use to melt the ice after a snow storm, pretty cool huh?

I don't think the stick is supposed to touch the inside of the jar for the rock candy. If it does it can cause the crystals to grow on the jar and not the stick. I think the clothes pin was to suspend the stick so it did not touch the sides or the bottom of the jar.

Best way to dissolve sugar, bring the water to a hard boil, pour ALL the sugar in at once, use a metal spoon to stir and keep stirring until the solution is clear and you can't see any "grain". (:

The rule of growing crystals on a stick is to make the string suspended at the middle and should not touch the bottom. When crystalization forms, the crystals from the bottom will reach your stick and stay there. If you try to remove it, your candy or crystals will be ruined
