Wish you all Merry Christmas, may this season bring lots of joy and happiness to you and your family.
Today’s recipe is very colorful And bright to represent the essence of this season in Desi style! Colors do the magic for eyes and makes it appealing so making puris using some colorful vegetables. Also this puri is air fried and served with sweetened greek yogurt also called Shrikand infused with saffron and nuts. Nutrition packed dish that satiates the kid with sweet-tooth!
This recipe takes about 45 minutes to get all the puris ready and 5 to make the Shrikand so total of 50 minutes.This recipe will yield about 60 puris (about 20 -22 puris from each dough) I have used 6cm diameter cookie cutter.

Detailed recipe with ingredients below:
Ingredients
For Rainbow Puri:
-Whole wheat flour - 3 cup (1 cup for each dough) + 1/2 cup for dusting
-Raw Carrots(finely shredded) - 1/2 cup + 2tbsp
-Raw Beet(finely shredded) - 1/2 cup
-Frozen Green peas(blended)- 1/2 cup + 2tbsp
-Salt - 2 tsp
-Oil - 1/3 tbsp
-Water - 1/2 cup
For Shrikand:
-Greek yogurt - 2 cups
-Shredded nuts (almonds,pista)- 3 tbsp
-Milk(Warm)- 3.5 tbsp
-Kesar - 1/2 tsp
-Cardomom powder - 2 tsp
-Condensed milk - 3/4 cup
Recipe for Rainbow Puris:
For yellow dough: In a bowl, form a semi-soft dough with 1 cup flour, finely shredded carrots, salt, 1 tbsp oil and slowly adding water as needed. Cover and let it rest for 10 minutes
For red dough: In different bowl, form a semi-soft dough with 1 cup flour, finely shredded beet, salt, 1 tbsp oil and slowly adding water as needed. Cover and let it rest for 10 minutes
For green dough: In different bowl, form a semi-soft dough with 1 cup flour, finely blended peas, salt, 1 tbsp oil and gradually adding water as needed. Cover and let it rest for 10 minutes.
Preheat the Air fryer (if your Air Fryer requires it)at 350 degrees F
Now it's time to roll the dough
Starting with the first dough(yellow), take about a small dough ball and start rolling till you get 1/4inch thickness
Then take a round cookie cutter or lid of bottle to make the impressions and make equal size puri’s
Remove carefully all the puris and mix in the extra dough with the remaining dough and roll again
Reuse the extra edges and mix in with remaining dough and roll again and cut out small puris.
Next, time to roll the puris from green and red dough in similar manner as we did with yellow dough
While you are still working on the other dough, simultaneously you can air fry puris in the preheated air fryer
Arrange about 6-7 puris with few inches apart from each other
Bake for total of 7 minutes, while overturning it at 4minutes and continue to cook for 3 more minutes
Recipe for shrikand:
In a small bowl, mix in warm milk to 1/2 tsp Kesar (saffron) and keep it aside
In a separate bowl, whisk together greek yogurt, condensed milk, saffron milk and cardamom powder and mix it till well combined
Lastly, garnish with chopped nuts of your choice. I have used shredded almonds and pistachios.
