I had some for a while barely using it and then found a recipe for Kung Pao chicken that used Chinese black vinegar and dark soy sauce (mostly caramel coloring). I took the sauce and made Soy Curl Kung Pao and it’s amazing it made all the difference.

I always scrub it first and use organic ginger - seems worth doing those two to avoid the task of peeling it 😅

When people say that tofu has no flavor, I readily agree. Coming right out of the package, it is bland as can be. However, it is a flavor sponge. Once the bulk of the water is expelled, tofu soaks up the flavors of whatever it comes in contact with. That is why you press the tofu. If you skip that step, the results will be bland tofu. Pressing is essential. I do disagree with the statement that "you can't have a saucy tofu dish without rice." I have had many without rice.

The Korean version of this dish is called dubu jorim and has been my go-to tofu dish ever since I went vegan, and I also use it to win over tofu sceptics. I can't wait to try your take on it!

Love your stuff. Your comment about “no need to peel the ginger, just scrub it” sent me down a rabbit hole and I’d be really interested in how you prep for the prep. I.e. washing and storing the veggies, organizing the spices, etc. I was intrigued by the large tray of items. Do you store them together like that on a shelf simply to make them easy to grab, or do you have multiple trays organized by flavor profiles? I’d love some insight into veggie cleaning and storage!

I’m a meat eater, but I usually keep a couple blocks of tofu in my fridge at all times. That way, a quick easy meal can be ready at any time. Unlike meat which I prefer to buy and cook same day or next day.

Koreans also have a similar recipe - dubu jorim - that has ingredients that many folks will already have except for the gochugaru. And then there’s the classic, even simpler Japanese style which is to eat it steamed or cold w a delicious garlic soy dressing that you can make in seconds and is ladled over the top. All eaten w rice as the sauces can be strong but very delicious ways to get folks to try tofu

Yum. I just made something similar but w/ cornstarch coated tofu so it was crispier. It's so, so good! And yes to the Chinese vinegar. It's a secret weapon. Your parents are so adorable btw! You can tell your mom really did enjoy the tofu! 😅

My maman got me a tofu press... A tiny little thing and it works wonders! Tofu needs the most love in all the vegan foods. I started marinating my tofu once it's pressed, life changer! Always have some sort of tofu in some sort of marinade in the fridge ready to go!
