I lived out of my truck during nursing school. So I didn’t have to pay a mortgage. I rented out my home saved a lot of money. It was the best thing I ever did. Because of it, I became a minimalist. Now I have a nice Homestead out here on 32 acres in Virginia.

My favorite beans are pinto beans. When my son was home for a visit, we had Lima beans and pinto beans, just about every day. He lives in Germany. That’s the country my great-grandfather is from. They don’t have the dry beans there. The sound of run is how I go to sleep many nights. It’s always good to save money.

With the that is going on in the world it’s hard not to be discouraged , hang in there , before I get up in the mornings I have some positive affirmations that I say every morning I think it’s really helpful . And I’m limiting my time on my phone , I have days when I don’t look at my phone and I don’t look at the time . There are so many demands in daily life and that can be a struggle at times , I try and keep a morning and night routine that helps a lot . Have a Beauridul and blessed day ❤

I love dried beans!! I was raised on pintos, but cranberry beans are better. My favorite bean though is mayacoba. You can mix up cornmeal and pan fry it in a little of that bacon fat in your skillet.

I love the rain. I have always wanted to live in either Washington State or Humboldt. But I have my 92 year old dad to take care of so here I am stuck in central ca where it’s hotter than a devil’s den. But I love Fall and Spring and that’s about all I like about this town. Thanks for discussing (so calmly and thoroughly) how to prepare and cook beans. Years ago, I went to a food workshop and they suggested eating beans once per week instead of meat. When I did that (even once per month) I felt better. I never knew how long to soak beans (one hour for a boil and let it sit is a great tip!). We are all trying to save $$ and this really helps. @@StaticCamperVan Just about anything that can typically be cooked in an oven can be cooked stovetop. I've had my stove (new in 2006) in constant use, but in all those years have not used the oven once. Not once. I do everything on one burner and usually in one pan or pot. So corn bread can be done stovetop too. It works well in a slow cooker or pot with lid on very low. Love how you use the "haybox" method (passive cooking) for cooking your beans!

Hey Scott. Hope you are doing ok, in the UK one of our “national dishes” (lazy comfort meal) is beans on toast. You can ‘gourmet’ it up with a fried egg and grated cheese. Not the height of the culinary world I grant you but sometimes it can’t be beat.

I do miss the soaking rain down here in San Diego, although the nights have been down to 49 degrees which is a bit on the cool side. Once the sun comes out it warms up to the low 70s which is perfect. I have to laugh because last fall and winter I was in Indiana, so I can't really complain . I'm very happy to be on the west Coast!

I saw the title of your video and immediately looked forward to clicking on it but it makes me appreciate how lucky I am sometimes. Sure, it must be nice being out there in the van to enjoy being snuggled up warm whilst the rain falls on the outside but I'm sure there are a whole host of other issues we never see.
