This video explains the methods for producing natural, sun-dried raisins from the Thompson seedless grape variety in vineyards located in Bijapur district, Karnataka state, India. عملية إنتاج الزبيب About 4 kilos of fresh grapes are required to make 1 kilo of raisins. The most widely grown raisin grape is the Thompson Seedless variety. They are used in the production of over half the world's raisins.
Bijapur district of Karnataka state produces maximum quantity of raisins than any other area in India. It is because of its most suitable weather for grape cultivation and raisins production.
Making of raisins involves several steps like harvesting at suitable time, processing, drying, grading and packing.
Raisin production in India is based on the dipping of the berries in dip emulsion, which contains potassium carbonate and ethyl-oleate and drying in shade.
Watch the video till the end to know how fresh grapes turns into raisins..!

ನಮ್ಮ ಕರ್ನಾಟಕ.. It feels nice to see those bounch of grapes in natural way. Though being the second largest(most) drought prone area in India, North Karnataka is one among well cultivating places of grapes in India. I m proud to be a ಕನ್ನಡಿಗ..

Most often than not, when I see various products being treated with some or the other chemicals, in either the production process or finishing / packaging, I start disliking it. What are we eating today? Chemicals? Is this what they call commercialization and prosperity? At the expense of the health and lives of the innocent consumer? The ancient era was golden.. when at least what you ate was pure!

Thompson seedless grapes (Vitis vinifera) were pretreated in potassium carbonate and ethyl oleate solutions for 1, 2, and 3 min at 30, 40, 50, and 60°C and dried in a convective air dryer at 60°C. The effect of dipping time and solution temperature on drying rate and color kinetics were investigated. Grapes dipped into the solution at 60°C for 2 and 3 min had the fastest drying rate. Among the seven semi theoretical models compared, the Midilli equation best described the drying curves of grapes for all dipping pretreatments. Color data were obtained using a machine vision system in CIE L*a*b* color space. Regardless of the dipping time and temperature applied, all raisins had varying degrees of brown coloring. At all dipping times and temperatures the highest R 2 value was obtained for a* values, which followed zero-order reaction kinetics during drying.

The deep mahogany raisins are made by being laid on paper trays and allowed to dry in the sun for several weeks. To make yellow/golden raisins, the grapes are dipped in warm water and then coated with sulfur dioxide to make sure they stay golden throughout the drying process. Maybe the sulfur dioxide is why the water looks milky.

Fruit drying oil helps in quick removal of moisture. It is a blend of Lower Alcohol Esters of vegetable oil, Sulphonated Oils and Emulsifiers. This with Potassium Carbonate forms an emulsion in water. This contributes to the increase in drying rate and is necessary to prevent fermentation of the emulsion in a bulk dip under some conditions.
