RAM LADOO / MOONG DAL PAKODE CHAAT
Preparation time 10-15 minutes
Cooking time 10-15 minutes
Serving 2-4
Ingredients
For Pakode
2 cups Moong dal, soaked, मूंग दाल
1 cup Urad dal, soaked, उड़द दाल
½ cup Chana dal, soaked, चना दाल
½ inch Ginger, chopped, अदरक
2 Green chilli, chopped, हरी मिर्च
Salt to taste, नमक स्वादअनुसार
¼ cup Radish leaves paste, मूली के पत्तों का पेस्ट
Oil for frying, तेल
For Green Chutney
5-10 Radish leaves, मूली के पत्ते
½ inch Ginger, peeled, slice,अदरक
2 Green chilli, broken into half, हरी मिर्च
½ cup Coriander leaves, धनिया पत्ता
¼ cup Mint leaves, पुदीने की पत्ता
Salt to taste, नमक स्वादअनुसार
For Fresh Salad
1 medium size Radish, grated, मूली
2-3 Green chilli, finely chopped, हरी मिर्च
1 tbsp Coriander leaves, finely chopped, धनिया पत्ता
2 tbsp Radish leaves, shredded, मूली के पत्ते
Salt to taste, नमक स्वादअनुसार
½ lemon juice, नींबू का रस
For Garnish
Curd, beaten, दही
Green chutney, हरी चटनी
Tamarind chutney, इमली की चटनी
Pomegranate pearl, अनार के दाने
Process:
For Pakode
In a large bowl, add soaked moong dal, urad dal, chana dal, ginger, green chilli.
Transfer this into the grinder and grind into smooth batter.
Transfer this mixture into the large bowl.
Add salt to taste, and beat the mixture well until air is incorporated.
Add radish leaves paste and mix it well.
Heat oil in a kadai on medium flame.
Once the oil is medium hot drop the pakode one by one into the oil.
Once the pakoda is slightly golden in color and cooked from inside.
Drain on a kitchen tissue to remove excess oil.
Garnish it with curd, green chutney, tamarind chutney and pomegranate pearl.
For Green Chutney
In a bowl, add radish leaves, ginger, green chilli, coriander leaves, mint leaves, salt to taste.
Transfer it into a grinder and grind it into smooth paste.
Transfer it into a bowl and keep it aside for future use.
For Fresh Salad
In a bowl, add grated radish, green chilli, coriander leaves, radish leaves, salt to taste.
Add lemon juice and mix well. Keep aside for future use.

Hi Ranveer, There is a story behind the name. Because the batter for Raam Ladu is perfect when the small ball made with batter floats in bowl of water(as you have shown in video). When Lord Ram and Vanar Sena where building dam for Lanka. Ram himself tried to put one round stone(pebble) in water thinking it would float, but instead it sank down. Angad would was standing beside Ram started laughing. Ram asked why, the stone sank. Angad replied- The thing on which Lord Raam gave up/abandoned(here the stone), how can the mighty water body accept it. Thanks 😊

People usually throw away the radish leaves but at our household we absolutely love radish leaves. From salads to sabji we make every thing from it. They are very nutritious and rich in fibre.❤️

I am from Delhi and Ranveer ji aapne bachpan ki yaadein taja kar di. Garam garam ram laddu and uske sath wo teekhi hari chutney aur muli ke lachhe. the best snack anyone could ask for in 5 rs. I often think that I will make ram laddu one day then forget it, but now I am gotta make them! Thank you so much for sharing this recipe !

Amritsar Ram Laddo are the best in world. I remember when they were Dheli dey chaar! (Dheli is 50 paise and chaar is four). Only in Amritsar you can get a mooli with lemon, kala namak on it in winters.

Hey chef, my friend just immigrated to Toronto from Amritsar and has been constantly been talking about khatte (sour) ladoo which I believe are the same as ram ladoo. Thanks for sharing this recipe. I'll be surprising her by making this for her!

What a coincidence sir, I was talking to mom the other day when we made moong dal dosa. I was staying at Lajpat Nagar from 1999 to 2005, F block , Lajpat Nagar IV. I used to go to Lajpat Nagar Market and never miss out eating this Ram laddoos with mooli chutney. What a place to be at that is Lajpat Nagar. Thank you for sharing this recipe. Once I asked that person the proportion for the Ram laddoo and he said 3 potion moong dal and one portion chana dal. He never mentioned abt urad dal. Good you shared this recipe. Will make it. I am presently at Mumbai with my son and my mom, a small family. Will surely make this. Thank you sir for this recipe. And one more thing Sir , you look just 30 to 35 age wise. Excellent. I lived in Delhi, close to Lajpat Nagar. Every time I visit India, (I am in US, past 47 yrs), Lajpat Nagar for its shopping and 'Ram Laddu" as well "Matra and Kulcha". Thank you Chef Ranveer. I am going to make it, may not be as delicious as yours! All the best.

I want to dwell in the past when a street vendor came to the door every afternoon selling Laadu,as they were called then,in 1969/ 70.A plate cost five paise.Long live Ram laddu.

Offo.. kitnibaar Hyderabad main shadi byaah ki dawat main .. Delhi ki chaat wale ate hain aur woh Ram Laddu lagate hain Hyderabadiyon ko iske baare main pata nahi hone se ham bolte thee .. dahiwada fancy style main .. muli kachumber ke saath present karke de rahe hain Thnx Ranveer for guiding us ..with ♥️

मैं सिर्फ मूंग दाल के बनाती हूँ, आप भी कभी बनाकर देखिएगा। चटनी में मिंट भी नही डालती। वैसे तो सच यही है इसका फ़्लेवर पूरा मूली से ही है। और इतेफाक से जब में ये देख रही हूँ वीडियो , आज ही शाम को मैं बना भी रही हूँ राम लड्डू। दाल भिगोई है। बाकी आपका प्रस्तुतिकरण तो है ही कमाल।
