As a recent transplant to maui I can't get enough of local eats... Saimin is still something I try anywhere it's available 😄... What you said reminds me of Detroit coneys... They are pretty repulsive if you didn't grow up eating them. (Go ahead find a flattering picture of one... I'll wait) They will always be there to remind me of growing up where they only dinning out food options where fast food...or Coneys. If only i could replicate them here... Tho zippys chili is astonishingly close.

Frozen maple syrup on a stick lol. Ive worked for catering companies and restaurants and been all over and had amazing foods. But nothing is quite like being in canada on a winter day and tapping fresh maple syrup, heating it up and pouring it in the snow with an old popsicle stick in it lol.

Dude I’m so excited to try your recipe!! I feel exactly the same about the shitty not shitty Döner Kebabs in Berlin. Now in my 30s I go for months/years without them but whenever I do, I get the same feels.

@@WayofRamen They are for sure a local food you need to try! There is Döner Kebabs all around the world, but you will never get the same taste that you get in Berlin. Come and visit Andong and make a Vlog out of it!

Born and raised on Oahu. Moved to the mainland 40 years ago when my dad retired from the navy. I still remember the saimin we used to get at Ala Moana. Thank you for this.

I just had a similar experience. I have lived on the mainland for a couple decades now, but was born and raised in Hawaii. I found saimin at my local Asian store and made it. Taste wise, I'd have to agree, is not spectacular, but those memories....its hard to explain.

I think all home cooks long for and chase that "Remi-moment", sometimes I get the sauce just right and I'm 6 years old at grandma's place again. Cooking is beautiful. Keep up the awesome content!

What a raw and honest video. I love ramen and really want to try saimin one day, but I've never understood why people feel the need to compare them. Saimin may have been inspired by ramen or other Asian noodle dishes, but now it has become its own dish and should be appreciated for what it is. A tasty noodle soup from a beautiful culture! I feel we ruin both soups when we compare them; let's just slurp and enjoy. Haha XD

I made Sheldon Simeon's saimin recipe several times over the year. And I think its top notch. He too said "Ramen is Trendy, Saimin is Life" on the Munchies video. And I still absolutely agree with it. Great Video!

Yup, I’ve had some great ramens but growing up here and eating at your local saimin house (Palace Saimin on Oahu, hamuras, etc) there’s something about it that just feels right. Might be basic but it’s comfort food that hits you right in the feels.

Mahalo for the video. My father is from Hilo. We'd get saimin every year when we came to the islands to see family - the only times I ever got to see my apo and akun. I can still remember the taste of homemade saimin in my apo's kitchen, washed down with a glass of rangpur limeade. My folk's folks have been gone a long time now, but saimin always takes me back in the best way.

Okay I must admit that I started getting emotional sitting here eating my Saimin from L&L and like you said the football games highschool and college UH games brought me back to those days when my dad was in full health and able to take me and my older brother out like that and I'm emotional just reminiscing on those days which was over 20 years ago🥹 Thank you for this video as it brought fond memories to my brain and yes Ramen is trendy and Saimin will always be life.🍜🤙🏼

I felt this in my heart, man. Where I'm from we have these things called "wedgies". They're basically all the typical things you'd find in a BLT, just with a couple extra things like roast beef and italian dressing, inside a folded over pizza dough shell. That, for me, is that same idea of "the flavor of spending time with the people you love" and it'll always be one of my favorite things. It's good, it's nostalgic, but most of all, its home.

Thanks for sharing! I think about this topic of saimin vs ramen often. First off, saimin is as hawaiian as spam musubi, chicken hekka, lomi lomi salmon, spicy ahi poke, or oxtail soup. But like these dishes, some take off and others get forgotten or categorized into niche foods. Saimin on Kauai is big (so many shops!). But here on oahu it is often forgotten for the latest Japanese or continent food trend. (Outer islands are generally better at retaining “traditional” foods). But I think what people are missing about this is that both ramen and saimin are just noodles in flavored hot water. Ramen may have a “formula” to it, but these elements are just multiple methods to build flavor! Also, both are just adaptations of a basic East Asian/Chinese noodle soup, as are pho, Taiwanese beef soup, etc. Another way I’ve thought about saimin is as the simplest (arguably the most Japanese peasant-y) way of making ramen. E.g., Salt, MSG, water, noodles. Japanese cuisine is often about doing the most with the least ingredients and optimizing flavor from them. That is what saimin is about to me. Thanks again for sharing your thoughts with the world and making ramen more accessible to everyone! (Last thought, why can’t you make saimin with aroma oil or Tare or etc? Try it!)

The saimin i made for the video has tare and is made like I was making ramen. it was pretty good. I didn't do aroma oil for the video to keep it true to roots but i did a second bowl with aroma oil and it was great, but it started to veer to much into ramen territory.

Berrah you got me all emotional. I grew up on Kauai, and ate at Hamura's with my family all the time, that was my FAVORITE place. Fast forward to adulthood, I've since experienced "real" ramen, and quickly realized that saimin kind of sucks. Fast Forward another few years, I live on the mainland and have a family of my own. I once visited home with my family a few years ago and went to eat at Hamuras, I remember I never like go because I thought it would taste like "crappy ramen". Instead, I had that same ratatouille experience and got a little emotional, the memories of eating there with my dad, of eating saimin at sports games and loading it with aloha shoyu packets, all the same stuff you talked about. Since then, whenever I go home I go eat Hamuras, just to have that ultimate comfort food experience, and relive those memories. Anyways, I love your videos, they remind me of home, and your aloha spirit really shines through, because of your humility, genuineness, and passion for ramen. Keep it up my braddah!

Dude i LOVE your channel! Really would like to try saimin one day! I am a greek guy that lives in germany, moved to a town called düsseldorf cause they have one of the biggest japanese communitys in germany just so that i could work in my favourite ramen store cause i started learning japanese 4 years ago and figured it would drastcally improve my japanese, and here i am really worling for that restaurant :) my 店長 is a really great cook and someday he wants me to join tje cooking team since i am just a dishwasher for the time beeing haha. But through your videos i can hopefully surprise him with a bit of knowlegde about 梘水 and other atuff and hopefully soon have made my very own ramen! Thanks alot bro! 頑張ってね!

I remember exactly how magic was the first slurp of saimin at Hamura back in 2019 (august).. it was humid and hot, and it was love at first sight.. the only problem.is that i live in italy and no one knows what saimin is here.. thanks for the video!

I recently visited Kauā'i and had a chance to go to Hamura, and I absolutely loved it. It wasn't nostalgic for me, I didn't have any of the associations you do, but I loved it.

As someone who discovered Saimin from this video, I resonate with this nostalgia that food provides. A Sunday Roast in Yorkshire will forever be that nostalgia for me. However, England doesn't seem to have many broth / noodle dishes with that same ritual. Thanks for sharing!

I dropped tears! Oh my gosh it's so true!! First LOVE people! And I'm not even a saimin lover!! But in hawaii there's always that person that just loves saimin, while everyone else is eating curry plate, teriyaki, and what not, they just want saimin. Love it. Saimin is life. But I did just spend a bunch of time making tonkotsu broth with pigs feet, you are the one who inspired me, and my ramen was N U T S! The broth was so rich and good, the noodles, everything, the egg, man...I couldn't even finish it!!! And I also made some ramen egg with DUCK EGGS! lol Living the farm life in Hawaii is tasty. Thanks for your ramen videos, but this one was all love!!!

When I first came to college on the mainland, I called packaged ramen saimin (of course) and my friends were all so confused. “Simon?? What??” I didn’t realize until watching this video that somewhere along the way, I stopped calling it saimin. I should start that again, even if it’s not the old shrimp Sapporo Ichiban packet...the memory of my grandma cooking it for me when I was over playing at her house or my dad boiling a packet when I was sick, the word is resistance and memory. Thank you :,) and I’m excited for your recipe next week!!

Nostalgia man... The most important ingredient of all. :P I feel the same way about an instant noodle brand called. "Apollo" made in Mauritius. Also.. random comment ...was nice to hear the zebra doves in the background haha I grew up on a tropical island too.. I miss hearing those birds..

Straight made me get teary. Becoming celiac means I don't get to enjoy a lot of the foods of my childhood anymore... for sure that nostalgia factor, but also comfort food is a real thing. Dammit now I'm getting nostalgia too. After a tiring shift working at the boy scout booth at Bon dance and getting a nice cup of saimin in the waining hours of the evening. It was wasn't spectacular by any means but I wouldn't trade it for the world.

I have traveled to Hawaii a few times over the last couple years. I love going to the saimin shop. Not the same as ramen, but I totally get it. Palace Saimin and old saimin house were great. The checked sticks were good and botj places pretty inexpensive. Won't give up ramen but I enjoy saimin alot.

Never in my life have I ever imagined being to pushed to the verge of tears by a food channel. I know we are from different backgrounds and ethnicities, but what you said hit home for me. I moved to america because of university and sometimes I honestly wonder if my education was important enough for me to leave my country. I don't belong here. These white people don't get me and I don't get them. The food is not bad, the housing is fine and I have enough cash to survive. But it's not home. Due to covid, i came back to my homeland. The food i had was 'daal' ( lentil soup). It's most common side dish in Bangladesh. We call it the 'poor man's protein'. I remember ugly sobbing when I had first sip of daal. It was oversalted and cold. But tasted like home . I get what u r sayin'. Nothing beats the taste of home.

Please bring back the original Hamura saimin! When I used to sit behind the kitchen, watching the old man cooking the noodles while his wife prepped the garnish and the daughter took the orders, cooked the BBQ sticks and served the saimin. Then before we left, asked for the Chinese pretzel, if there was any left. If it was lunch time, I would ask for a hard ice that the daughter had in the freezer.

So funny. I grew up in Hawaii and always called it Saimin until I lived on the mainland for a while. I figured Ramen was what people on the mainland called it because that was what was on the packages in the store. haha

I kind of had a similar experience recently as well, but not as emotional. I haven’t had saimin since I was a kid, but I recently started working at a place that has it and tried it again. And wow did I miss that clean light flavor, especially since I had developed such a very unhealthy and heavy diet, I pretty much get that half the time I order my employee meal now. I think I might just order that for my shift tonight lol.

I grew up in hawaii as well. Shige's over in Wahiawa represent. For me ramen growing up was top ramen or cup of noodle, while saimin was S&S Saimin that I would get at foodland. It had a fresher/realer taste to it.

Old school Shiros Saimin was a staple growing up. Or another, was Boulevard Saimin on Dillingham. For the Drier variety it was Fried Saimin at Mililani Restaurant. Heavy sigh... I think I need a time machine. Lol

There's a great Okinawan restaurant in Nagoya where I live. It's the closest I can get to the nostalgia of Hawaii Saimin. There are a lot of connections with heritage and lineage between Okinawa and Hawaii, so maybe Saimin has some connection there, too. Seriously, Okinawa soba is my Saimin fix in Japan.

Definitely Okinawan soba had a lot of similarities! It's probably one of the ancestors of saimin.

Born and raised on Kauai, and Hamura Saimin is THE place to go to grab a proper bowl of saimin, it used to be that there were lines OUT THE DOOR for getting a bowl. Since moving to Denmark, I cant really get proper saimin, just variations of Ramen. When I visit Kauai on vacation I make it a point to get Hamura Saimin. Moreover, S&S Frozen Saimin was my lifeblood, and yes, I have a Ratatouille moment whenever I eat it, watching my brother play Baseball and I'm sitting on the bleachers when its a chilly evening. Certain smells will also do this to me. I know I'm not the only one.

I recently did a similar thing with pho. As a kid, my parents would always take me to a local pho shop in San Jose. To this day, it's still our favorite pho restaurant; nowhere else we've tried can beat it (here in the bay area anyway). My dad started making his own broth at home, trying to recreate a Tainan beef soup from his childhood. But somehow it ended up tasting a lot like the pho broth we liked so much, so he tweaked the recipe more towards that flavor. Now, I'm still super new to all the ramen stuff, and to be honest I don't think I have much experience with amazing, crafted ramen like you'd get in Japan, nor do I have the palate to discern all the subtle qualities that make a great bowl of ramen. But I was fascinated by the theory and the technique, the amount of detail into the science of this dish. I've made ramen maybe like 3-4 times since last year, and while they've been really good, they've mainly been just that: a really ygood noodle soup. I happened to have some beef bones, so with my dad's beef broth recipe in hand, I decided I could try to deconstruct pho as though it was a ramen dish. Rather than tossing bones, aromatics, and seasoning all together and boiling for a mere 3 hours, I tried to extract all the gelatin from the bones first, simmering for about 15 hours. Then the aromatics, which I realized was an interesting combination of both Western and Eastern mirepoix, plus my dad's Taiwanese-Vietnamese spice mix for another hour. And the "tare" was simply fish sauce and oyster sauce, which true to ramen fashion I decided I'll keep separate instead. I then got all the other ingredients needed to make pho: rice noodles, thai basil, raw beef slices, etc. and fixed myself a bowl. I was blown away, because just like with the saimin, I could taste my childhood. Sorry for the long rant, but basically because of this experience, I have so much more appreciation now for ramen, not just as a dish, but a method, techniques and theories that could apply to almost any noodle dish you can think of. I plan to experiment a lot more in the future using ramen techniques on different dishes

Yeah... Saimin is Life in..... Hawaii. Ramen is Life everywhere else though. When I was living in Thailand, Racha Bamee was life to me.

I can relate. Grew up in the Great Plains region in the US, spent my young adult years in Hungary. For the last decade, I've been living in the US, chasing the white whale of authentic Hungarian cuisine, especially pörkölt (meat stew braised in an onion and paprika gravy, similar in technique to Texas-style chili, often served with drop noodles/spätzle). But I just can't bring myself to hate school cafeteria-style American "goulash." It was the most disappointing menu item as a kid, both at home and school. Now I feel like a kid when I make it -- just what I need sometimes.

I’m actually the opposite I love saimin and hate ramen and always have to correct my family when they say they bought saimin cause I am excited but then I see it’s ramen, in my adult life I’ve only been desperate enough to eat ramen probably about two hand full of times compared to saimin. Love Nori’s saimin in Hilo, one day got to try it on Oahu.
