Can anyone tell me where you can see how many quests you've done so far? I can't see any counter or anything

Number below the picture shows what is the next level. Battle royale quests are on every 10. Thats, how you can track it after 30 quests done in rocket racing.

@@EH_ehhh No, the racing quests and battle royale are separate. So you can't drift in battle royale and score points in rocket racing or the other way around.
