Baked leeks

Ingredients
4 leeks
Half liter of milk
45 g flour
20g butter
nutmeg salt
50 g parmesan
50 g mozzarella
Baked leeks with cheese are a worldwide recipe, in their simplicity they move by how sweet and tasty they become.
We cut each leek into sections as wide as the pan we intend to use. The first section near the root has roots that need to be cut off. The rest of the leek has a few green leaves and a lot of earth and therefore they must be opened with patience and with a knife and washed well. It is also good to cut the leeks lengthwise in half.
A pot of plenty of boiling water, put the leeks to boil calculating 5 minutes from when they start to boil after putting them inside.
Drain.
Pour the water into the same saucepan as the leeks and put half a liter of cold milk, 45 grams of flour and mix well immediately, salt and nutmeg, to taste, 20 grams of butter.
Bring to the boil while stirring, it will thicken as soon as it is hot.
Put 2 ladles of béchamel under the pyrophile, a layer of leeks, parmesan and mozzarella to taste and continue like this in alternating layers until the ingredients run out, the important last stage is to cover with béchamel and cheese, but generally two layers of leeks will be enough.
in the oven for 30 minutes at 180°C in a preheated oven.
