I visited Belmont Estate last Friday. My 2nd occasion as a born & raised Grenadian. Great experience. Got to taste the chocolates & see how they traditionally dried cocoa back in the day.

When you put Cocoa in Sun always look out for Rain. In the Early years this was done in a Copper with socks, it is called trampling. The small Beans are called off-grade beans.When my Grandmother made cocoa the pot stained, this was the Caracas Cocoa.

Nutmeg gets used in a lot of potato dishes especially mashed patatoes in the western world.But is mostly used for desserts or cakes and of course in pumpkin spice latte's :)

Hi Matt. You don't have to peel the skin of the fat poke. You just eat skin and all. We have plenty of it here in st Lucia. Just by my house. The skin is easy to eat very thin and contributes to the taste. Shouldn't ignore the skin.

There must be a way to harvest all of that fruity flavor that's on the outside of the fresh coco bean! Make it into juice and can it. Make that juice into wine and bokkle it. Reduce it and turn it into hard candy and bag it. Spread it out and dry it into fruit roll ups and share it with the world!. I'd certainly like a taste.
