I made Coconut curry last week. It was so good. Fried the coconuts first then put it in the soup with coconut milk and chickpeas. So spicy and delicious. Here is the recipe: Ingredients: 1 8oz/226g Package of Unsweetened Coconut Flakes 2 Cans 15.5oz/439g Chickpeas (Garbanzo Beans) 7 Cups/1750ml of Water 2 Tbsp/30ml Coconut Oil, I used refined, but you could use regular, I am sure it would taste better. 1/2 cup/125ml of Tahini 1 Teaspoon/5ml Nutmeg 1 Teaspoon/5ml Turmeric Powder 1 Teaspoon/5ml Red Cayanne Pepper Powder or more to taste. 1 Tsp will give you just enough heat to know it is there. 1/2 Fist full of flour Salt to taste You will also need: 1 wok or a large frying or sauté pan or skillet. 1 6 quart or 4 to 6 liter pot. 1 2 quart or 1.5 liter saucepan. 1 Blender 1 Fine Mesh strainer 1 Whisk or fork 1 small clean bowl What to do: First, turn on KZbin and go to Ras Kitchen Channel and go to your favorite video and press play. Once that is done, open both cans of chickpeas and strain them through the strainer. There is no need to rinse them, but if you choose to, you can save the juice as a vegan egg substitute. It will keep in the fridge for a few days before you use it. Put the chickpeas in the pot, but do not start cooking them yet. Then, open the bag of coconut and divide it in half. One half is going to be fried and the other half is going to become milk. Put the coconut oil in the frying pan. When it is melted go ahead and add one of the divided portions of the coconut flakes. Continuously stir the flakes on medium until they are all a rich golden-brown color. Once this happens, take the flakes off of the stove and place them with the chickpeas in the pot. Now take the empty sauce pan and put the other uncooked portion of the coconut flakes in and on top of that add two cups/500ml of water. Bring to a boil. Reduce to low and simmer covered for about 8 minutes. Remove from the stove and let it cool down for about 5 minutes. When it is cooled down a bit, place the boiled coconut flakes and the water in the blender and blend on high for about 2 minutes. I don't have that great of a blender, so I had a lot of pulp left. if you have a better blender, you may have different or better results. Once blended, pour through the strainer into the pot on top of the chickpeas and the fried coconut. Push as much through the strainer as you can with a spoon until you just have the pulp left and not much liquid is coming out. Put the pulp back into the blender and add two more cups/500ml of water (doesn't have to be hot) and blend again for another 2 minutes on high. Dump and strain this again the same way as before. This should have given you about 4 cups of coconut milk. Toss what left over pulp there is away or compost it. Add another 2 cups/500mls of water to the pot and place on the stove. Place on med high and bring to a slow boil. Once it is boiling, reduce heat to medium and add all of the spices except for the salt and also add the tahini. Stir often for about 30 minutes. It should thicken up some, but it will still be pretty soupy, but that is where the flour comes in. Take the last cup/250ml of water and place in a clean bowl, add the flour to it and whisk it until it is smooth. Slowly pour half of this into the soup while stirring to avoid any clumps. If it is still very not very thick, pour in the other half of the water/flour mixture. When the soup is thickened, it is done. Remove from the heat and let it cool down for at least 10 minutes. Salt to taste, but depending on what kind of tahini you used, there may already be salt in it, and I didn't have to add any to mine, the other flavors are very strong. Enjoy!

@@RasKitchen Hey Matt. The Rastas in Jamaica and the School system have Jamaicans believing they all came from Africa. Man, I really like Scottish ppl, been in Scotland many times and have never had a problem other than maby whith that one guy who had a bit to much whiskey, some well thought through words later and we share a drink and a laugh rather than punching it out. The Scottish are kind of what swedes outside of the major cities are, a bit rough around the edges but so warm and welcoming if you pay attention and communicate, its good ppl:)♡♡♡
