I believe the start is primarily cooking down legumes (of all kinds, peas, beans, lentils, what have you) and starches (sweet potatoes, irish potatoes, various other root vegetables, starchy fruits like squashes and pumpkins).

I usually put the scotch bonnet in at the end so I don't have to stir it anymore, I find that if I stir the pot after I put the scotch bonnet in sometimes you will best the pepper when you stir

Dat a nuh Rasta Food. When l was about twelve in the sixties Eye Eye from top range mountain view, cook a pot of seasoned gunge peas and rice. Maybe there was about a dozen scotch bonnet pepper in the food. We had to eat sugar after eating a couple spoonful of the food. Right now as a LionHeart Rastaman, l could put at least 2dozen scotch bonnet pepper in that food
