Idli - there is a specific type of "idli rice " /boiled rice (old).(slightly yellowish in colour ) . 4/3.5 glass. Full udad dal 1/1.5 glass (dal should be a little yellowish shade ). Soak for 2/3 hrs. grind seperately both in grinder ( avoid mixie) after 15-20 min adding water in between to ensure batter is just consistent enough. Then mix both and grind together for 2/3 min add salt. Ferment overnight or 8 hrs. Before boiling idli - mix the fermented batter uniformly. Add a few drops of til oil in idli plate and spread it. Then put batter and boil for 10-15 min and serve with saambhar/chutney . 👍 Enjoy ! FYI - the current version of saambhar is Chatrapati sambaji's invention !! He gets the credit 👍 For dosai - the rice proportion is more(1:5) . Add more water (Batter will be thinner ) .tava should be low heat (splash water) and add oil drops uniformly while making dosai.
