Just superb... Dear one question is there... Will you please solve... In filling all are adding cream to it and I felt that by adding cream there may be chance to spoil the Chocolates. So without adding cream how much is the self life of bonbon...? And can we keep it out side refrigerator?

Usually high fat and high sugar things will keep any bacteria at bay. Plus the chocolate shell acts as an airtight seal so maybe 2 weeks or so

I saw on other videos that they paint the molds with coloured cocoa butter that is tempered and after that they put a layer of chocolate for the outer shell. Go see Markus Grigo, Paul A Young, Les sens ciel or Kirsten Tibbals. They are all good.

Smart...the lady has not shown the entire recipe. It's just for ganache and measurements too not shown. Simply mix any puree with sugar, glucose syrup and then blend with chocolate.
