I love that all your tools, pots and pans look well-used. I see other cooking shows with spotless stainless steel kitchens and it's like *rolls eyes* that's not your real kitchen...they probably haven't used half the appliances in there!

Do you allow me to give you two little tricks to improve the look of your beautiful, well tempered chocolates? 1. Polish your chocolate mould with cotton balls - this way the chocolate bacomes much more shiny. 2. Bump the mould on the table or bang a few times with the handle of a knife against the side walls to release the air bubbles that might have formed. 3. Careful with letting the rest in the fridge - if necessary because of humidity or high temps, cover them up. THANKS for your WONDERFUL VIDEOS.

I made this recipe using honey instead of agave syrup! It's delicious. It's softer than store-bought chocolate but if you keep it in the freezer, it'll 'snap' exactly like store-bought chocolate as soon as you take it out 😊

I'm a little bit confused. I learned that you must let the chocolate cool to room temperature after tempering before cooling it in a fridge since rapid cooling beforehand causes condensation which leads to blooming of chalky/dull film on the surface. I'm also worried that adding any syrup will cause seizing of chocolate due to water content. Your chocolate did not seize (it was smooth) but I have read people complaining about it online. Maybe agave has a low water content?

I had to use 200g cacao butter for 100g cacao powder. When I used just 100g, it turned into a frosting like consistency. Don't know where I went wrong.
