raw milk kefir is amazing! Yogurt has 3-5 strains of probiotics and it is transitory whereas kefir has 30-50 strains and colonizes your gut. Best thing ever! BTW, your grains look amazing!

I'd like to add a few suggestions, if I may. First, if you have a place to keep the kefir warmer than room temp, say closer to 80 degrees you will have a higher percentage of bacteria than yeast. Yeasts grow better at room or lower temps. Just my preference. Second, the grains usually settle to the bottom of the jar during the process. those grains really aren't that efficient at drawing down the lactose in the milk that sits at the top of the jar. Hence a few stirs during the 24 hours or longer, will help distribute the lactose closer to where the grains can get a hold of it. And third, I would recommend a strainer with a bigger sieve. Yours shown appeared so small that you needed to use your spatula with some effort. Most grains are medium to large size which get filtered out just fine with a large sieve. and, I do appreciate what you showed. Kefir is really the best. For those who can tolerate a bit of lactose,, mixing fresh milk with thick Kefir results in a drink that pretty much tastes and feels like you're drinking cream. worth a try.

Kefir grains float to the top. I keep yeast out by putting a lid on it. Yeast is in the air. Kefir doesn’t need oxygen.

You can add all kinds of fresh fruit among other things and let it ferment the fruit too. (After the grains are strained out) To the half gallon mason jar I add, 3 Tbs pure maple syrup, 1 Tbs Vanilla Extract and a mashed up banana. Other times, when Blueberries are in season, blend em up and toss in a whole cup. Strawberries awesome too.

I grew up in Russia (Republic of Lithuania) and my grandparents and my parents and I always made kefir from milk we purchased from our neighbor's milk cow or another neighbor's milking goats. All we did was left a jar (covered with cloth) of Raw, 100% Grass Fed milk on a kitchen counter for 24-48 hours and Voila you have a fresh made kefir or also we called it "Sour milk". It is same thing. However, in modern world people do not have access to Raw milk, 100% grass fed, therefore, you can not naturally ferment modern store bought milk, which is highly processed, DEAD product. That is why people have to buy a Kefir grains in the package to make homemade kefir from commercial milk even if it is Organic pasteurized milk.

No, you didn't make Kefir. That's called clabber milk and is a different way of fermenting milk. Clabber is also healthy and consumed from all over the world. Kefir is a special symbiosis of bacteria and yeast fungi that doesn't grow by just letting milk go sour.

The milk is cooked at low temperature to caramelize sugars - you can drink it as is, or you can ferment it and make "ryazhenka". She uses 2L of milk and then adds 0.15-0.2 L of sour cream for fermentaiton

@@kimberlyalexander6134 I use water kefir grains make the kefir as directed. Remove the water kefir grains and start another batch with the grains. To each quart of water that you have, you are going to make a second fermentation. This will make a fizzy coffee drink that is lightly carbonated because of the second bottling allows more fermentation gases to build up. Allow for this in the vessel you do the second fermentation in. Taste to see how much coffee flavor you like by tasting it and adding more coffee if you need it. Check it every few days and enjoy this fizzy adult "soda" I use grolsch style bottles because they are easy to open and close. Leave at least 1 inch or more of head space... be sure to check bottles for cracks as this weakens the integrity of the bottle. In warm weather, check more often and burp the bottles at least once a day as fermenting in warm weather speeds the process. You can put the bottles in the frig after they are fizzy. Please be careful opening as the contents will be under pressure. Mix the coffee and kefir water to your taste. Everyone is different how strong they like the coffee taste. ENJOY!

I was just sitting down to enjoy some raw A2 milk kefir and this video popped up. I let mine go for 24 hours but use a lot less milk so winds up about the same. I was wondering if you have advice on how much to drink. I have never been able to find anything much on that. I love it but figure you can overdo anything...even something good.

I know that some websites say to use no metal and that's what I did for years, but then I was told it doesn't make any difference. Donna Schwenk who has written several books on cultured foods and drinks kefir every day and travels the country speaking about cultured foods also said she uses metal. I've been using a metal strainer for a long time now and I've never had any problem whatsoever.

@maryhumphrey1470 The issue is: do not use metal that leaches. So, no aluminum, no copper, no iron, etc. It is fine to use stainless steel. It doesn’t leach/rust/breakdown from the acidity of the fermentation.

Raw milk doesn’t go bad, it just changes over time. My raw guernsey milk smells fine for two weeks or more. I just recently used raw milk that had been in the fridge for two weeks and smelled like stinky socks to set out on the counter to clabber. After 24 hours, the stinky smell was gone and it tasted fine and had the texture of loose yogurt. Raw milk kefir, plain and strained of grains, will last in the fridge for who knows how long, but 6 months for sure, and taste fine. There is a lot to know about this subject, and a few books you can read on fermenting that are very helpful.

The bacteria breaks down the lactose into glucose and galactose. Sugar does not disappear, but I believe there is 25% less sugar after the break down.

Kefir didn't originate in Russia, because it's mentioned in the Bible. That's the origin of kefir. The grains were created by God. That "someone" is God. Look it up in the Bible.
