spätzle are flour, eggs, salt and some sparkling water. than you habe a wooden plate and a metal scraper where you scrape the dough fast to little rolls directly into hot water, when they swim at the surface they are done. taste very different from casual noodles because of the eggs and they are more fluffy, because while mixing the dough you beat the crap out of it to add air to the dough, that's why adding sparkling water helps a little

Sauerkraut would NEVER be paired with rice anywhere in Germany… It would be like topping a burger or hot dog with nutella… And the apple sauce is cold and sweet. Together with the hot salty (and usually also oniony) potato pancake is just perfection! Umami at its best! And Schnitzel is best when pan fried in a good amount of ghee/cleared butter…. Also: usually in restaurants, unless they provide some greens with the main meal, you can always order a side salad…

The trick with späzle is they add egg to the doe. The portion she is eating has at least one egg in the pasta. Nougat is nuts cacoa and sugar, often named gianduja in english (en.wikipedia.org/wiki/Gianduja_(chocolate)) The Schnitzel is fried in Butter in a Pan. Lots of butter, but not fully covered. The molten butter is aplied to the top of the schnitzel, wich gives the traditional wobbely bubbles of coating. The flammkuchen is initialy used with the village oven to check if the temperature was right for the bread to be baked.

7:54 Kartoffelpuffer goes by different names, including „Rievkooche“ in the Rhineland („riev“ is the regional word for „grated“, because it‘s mostly finely grated potatoes, and „kooche“ means „cake“), but also in some regions „Kartoffelpfannkuchen“, which indeed translates to „potato pancake“. And yes, the apple sauce is more on the sweet side, but works surprisingly well with the (imho savory) potato pancakes.

That thing he ate is called "Mett-Brötchen", also bread roll meat. So it is raw pork, very chopped, more than normal ground beef. Than it got some spices in there, what chemically does its work, as the same way, as you cook it. Thats the thing, while you can eat it raw. Its very tasty, but you have to like the texture.

But yes, Elsass-Lothringen / Alsace-Lorrain are/were very mixed between german and french (also a reason why both countries fought and annexed it multiple times, or a german ruler instead of germany, as germany only annexed it once as a unified country).

17:14 the crust of the Schnitzel look much too dry. I think it was to long in the pan. If you bake it 3 minutes from both sides, it,s gonna be perfekt
