oh im so happy that you also are liking jaemin!! as for his personality he tends to be on and off so he has that shy side that you mentioned but also he can be a bit crazy haha. also you said that you dont really like watching compilations because theres too much going on but id like to recommend their regular content (i personally love their dance practice behinds and i think you might like it since well - its about dancing!)

I think your groups are Exo, Shinee, and the band maybe FT Island - just guessing here. I am happy to see you enjoy NCT Dream. By the way, Jaemin is definitely the one that always captures everyone's eye. He did with me and I got to know him when they were still quite young when I absolutely adored them but he's definitely special. I am happy to see him (and the rest) grow and develop over the years. I have always had a bit of a problem whenever I see his compilations as they reduce him to a weirdo mainly in clips taken out of context and majority are from when he was younger. He is an introvert who knows how to perfom when he needs to but is mostly quiet. He has stated publicly several times that as he is always surrounded by cameras and people, it saps his energy and he requires a lot of time to recuperate. I would suggest watching some of their own content like their uncut (behind the scenes) of dance practices, recording sessions, and music videos which may help you learn them better.
