I shred infantry in trench fighter, it gives you speed to out run the AA, and you can go toe to toe with other fighters that will start chasing you once you make your presence known by obliterating enemy infantry with darts

Check the options for "plane chase camera roll." It's in the advanced options. Disable that and there you go.

I'm not really into gears so I'm probably not qualified to give you an opinion on that. On the whole, I like BFOne a little less than BF4 and a lot less than BF3.

Edit your filters. I know the ps4 version defaults to searching for servers with only a few slots open.
