I tried the egg rollups your way and it's so much better! I used to try something similar but the tortillas were just warmed and not folded as tightly with scrambled eggs in the middle. I love this way because the tortilla gets a nice toasty brown. The only things I did differently are: used two flour tortillas since they were so small and one didn't cover the egg(s), shredded white cheddar and shredded parmesan chesses, cooked added cooked and crumbled breakfast sausage, and a smidgen of chipotles in adobo for heat. I did your butter trick on the tortillas but also used butter flavored cooking spray, butter and a smidgen of olive oil on the skillet itself to make sure nothing stuck. I did warm them briefly in the microwave because the egg didn't cook on the tortilla side all the way through for some reason. The result was very good. This will be my new thing/new way to make this.
