Intresting, are there any concerns about the Sous vide coming in contact with the tomato juices? I'm sure you did you homework, and I have one I just wasn't aware it could be used like this. I've always put things in vac seal bags.

Good question, and one that we should have addressed in the video but did not, so thanks for asking!! :) The immersion cooker had been thoroughly cleaned then sanitized in Star San immediately prior, so it shouldn't have introduced any new bacteria into the pot. The contact with food was minimal for sure since the tomatoes were in the brewing bag. There was a small amount of tomato juice in the water, which was easily rinsed off the cooker, so it shouldn't have harbored any bacteria afterwards. Then finally, the water was raised to the temp required for pasteurization, so by nature it should have taken care of bacteria that might have been missed. So we couldn't think of a good reason to not use it, and it solved the issue of being able to show the pasteurization process on our bar top. We should have had a disclaimer saying to make sure that it was cleaned well before and after, and why it was safe, but that was missed in editing. It wouldn't have been much harder to put the tomatoes in a sealed plastic bag, and we'll probably do that next time, or will at least make sure the disclaimer is there so people aren't following our lead blindly.
