Those ribs looked to be pretty tender there my man. I think the wrapping KILLED your bark though. Try wrapping meat side up next time. I know that sounds completely opposite of pork ribs, and it is. But the results are way better for beef. I don't even wrap beef ribs until they come off the pit to rest. Pour a little beef tallow over the top of the meat side, and wrap meat side up and let it rest AFTER it has come down in internal temp when you finish the cook. Usually, I rest down to about 160F after pulling from the pit, then pour tallow over them and wrap and rest at 145F until we are ready to tear into them. Overall great cook considering that weather man!!! Good stuff!!!

First off, I appreciate you taking the time to check out my video and give me feedback my man. It means a lot to me coming from a true pit boss such as yourself! This is only my second time cooking Beef ribs so I still have a lot to learn. What you are saying about wrapping them meat side up makes sense, the juices and tallow in the wrap did loosen up the bark. Next chance I get to try beef ribs again, Ill try your method of no wrap until they rest. And yea the weather was fantastic :) haha im used to the cold! Thanks again for watching man.
