In this new episode of our ingredient of the month series, our guest is cauliflower, the most precious vegetable of the season!
Sometimes we bake it, sometimes we boil it; we cook it with meat, we enjoy it fried, and we even pickle it. If we started counting the benefits of this amazing vegetable, it would take days, so our focus is only on its taste. :)
We gather those who love cauliflower and those who can't love it together in one video with Chef Ferhat's recipes that you have never tried before. We start with cauliflower pasta with ragu sauce, yoghurt dipping with cauliflower and olive chips, cauliflower risotto, and finally, we conclude this cauliflower festival with a fabulous cauliflower soufflé.

Pasta with Cauliflower Ragu Sauce
Ingredients
1/2 medium cauliflower
1/2 pack of penne pasta
8 oyster mushrooms
5 tablespoons of olive oil
1 medium onion
3 cloves of garlic
1 pinch allspice
1 teaspoon paprika
1 pinch of cumin
1 red pepper
1 teaspoon of granulated sugar
1 tablespoon of tomato paste
1 teaspoon of salt
1 pinch of black pepper
2 tablespoons of grated parmesan (for topping)
1 pinch of parsley (for topping)

Cauliflower and Yoghurt Dip & Olive Chips
Ingredients
For the dipping sauce:
1/2 medium cauliflower
1 pinch of salt
1 pinch of black pepper
1 pinch of cumin
1 pinch of paprika
1 clove of garlic
Juice of 1/2 lemon
3 tablespoons of yoghurt
1 lemon zest
3 tablespoons of olive oil
For the olive chips:
1 piece of filo pastry
5 tablespoons of olive oil
3 tablespoons of olive paste
1 pinch of thyme

Cauliflower Risotto
Ingredients
For the risotto:
1 medium cauliflower
2 tablespoons of butter
1 onion
2 cloves of garlic
2 tablespoons of cauliflower leaves
1/2 carrot
2 tablespoons of broccoli
1.5 cups of vegetable broth
1 teaspoon of salt
1 pinch of black pepper
1/2 cup of cream
1 tablespoon of cheddar cheese
For presentation:
Zest of half a lemon (grated)
1 pinch of freshly ground black pepper

Cauliflower Soufflé
Ingredients
1.5 cups of milk
1 clove of garlic
1/2 medium cauliflower
1 tablespoon of butter
1/2 full tablespoon flour
1 pinch of salt
1 pinch of grated nutmeg
1 pinch of black pepper
1 tablespoon of goat cheese
3 egg yolks
2 tablespoons of grated kashar cheese
