کچھ اہم باتیں جو کباب کو نہی ٹوٹنے دیں گی۔ 1۔ پیاز کو پانی نکالنے کے بعد شامل کر لیا کریں۔ 2۔ 3 چمچ بیسن شامل کریں 3۔ جو سب سے ضروری بات ہے وہ یہ کہ اس مصالحہ کو ہتھیلی سے اچھی طرح مسلنا ہے تاکہ اس میں چکناہٹ سی آ جائے۔ یہی طریقہ چپلی کباب کے لیے بھی ضروری ہے۔ 4۔ کباب کو زرا سخت ہاتھوں سے لگائیں کہ سیخ سے اچھی طرح چپک جائیں۔ 5۔ کباب سیخ پر لگانے کے بعد کم از کم 15 منٹ ریسٹ کے لیے رکھ دیں۔ اور پھر اسے پکائیں۔

Assalamualaykum warehmatulahe Wabarakatuh. For the seekh kebab did you wash the meat and dried it? Also you minced most of the onions at the end and so the water appeared in your bowl on the side but when you were putting it into another dish that water content wasn’t there so did you squeeze it out?

Marinate karein tou freeze hargiz na karein, kiyon k freeze karney sey jab de freeze ho ga tou jo pani chorey ga wo binding agent hota hai, phir kababon ko sanbhalna mushkil ho jaey ga. Marinate karein tou Fridge me rakhen takeh frozen na ho, aur bahar nikaltey hi kabab banayen is tarha asani ho gi.

Did you use frozen meat? Don't use frozen meat or it will be really hard to control it over the skewers.

My recipe for seekh kabab 1.5kg beef bilkul red 250gm kidney fat 250gm pani nikla huwa onion 150gm adrak 50gm green chilli 1 tb sp Salt 1tb sp red chilli 1tb sp garam masala 1 tb zeera 1 tb dhania powder Half tb sp ajwaen 1 tb sp backing soda Half cup ghee. Ye sb mix kar k normal jali wali machine se 4 time nikal len phir is mixture ko khoob giondhen aatay ki tarah. Phir 4hour fridge me rakh den. Phir seekh pe lagaen kabab nhi giren ge
