WOW:)!! I never knew that the gelatin dessert went back to the 1500s:)!! I was a child of the 70s into the 80s and I have many memories of Jello and Jello Instant Pudding cups:)!! As a Child, I did get a few stomach viruses and Salmonella once which kept me in the hospital for 2 weeks. So, during the sick times, I would eat Jello. I liked the Cherry and Strawberry Jello the best:)!! When I was feeling well, my Mom would make my favorite Instant Jello Pudding: Butterscotch Pudding:)!!! Thanks for sharing this very interesting history and so much nostalgia both in America as much as in my own Childhood:)!!

I love both gelatin and puddings. There was a store in my area that for a while sold a coffee flavor gelatin mix. I would put whipped cream on top of it and then drizzle chocolate. They also sold a pineapple pudding mix which was outstanding. I've found unique flavors of both gelatin and pudding over the years such as honeydew, green tea, a cooked orange pudding mix, cantaloupe, kiwi etc. What fun to try these!

One thing has stayed pretty true to their instructions and that's about "not using fresh or frozen pineapple" for fruit additions. A bit disappointing - if you're having a retro party and want to make molded Jell-O in the old copper plated molds, is that the boxes don't have the instructions for it anymore in favor of Jell-O Jigglers! But you can still get the instructions on packages of Royal Gelatin!

A family favorite at holidays is lime Jell-O with canned grapefruit. We used to use white grapefruit but that’s nearly impossible to find any longer, so we use pink grapefruit now. Make it to the box’s instructions but use the juice from the can as part of the water used to dissolve the Jell-O then add the grapefruit, after hand-tearing into smaller pieces, into the cooling Jell-O stir once midway through congealing so the grapefruit doesn’t all sink to the bottom. We prepare it in a 9x13 inch Tupperware dish then slice it into squares to serve. My grandmother made a Jell-O salad using apricot flavor, finely diced celery and carrots and cottage cheese. Yeah, it sounds a bit gross describing it but it was surprisingly tasty.

I discovered the Jello Gels so it hasn’t been long since I had some. They are great when you wake up in the middle of the night hungry. I remember my mother in law making an awesome lemon meringue pie and she used lemon Jello pudding and pie filling. As she was making it she would add some lemon juice from a fresh squeezed lemon to give it that extra tartness. Of course being a southern woman who learned how to cook from her mother the crusts were made from scratch and it was topped with peaks of meringue that got a quick turn in the oven to brown off the peaks. My son brought home a lemon meringue pie the other day. He said It’s not grandma’s but at least it’s something. She took the love with her when she died! The hole in our family was the size of the Grand Canyon I think!

I have some Jell-o in the pantry, but rarely mess with it. I buy the premade stuff in the dairy bunker most of the time and not the Jell-O brand as it is no better and way pricier. We do buy the Jell-O pudding mix and put it in Oreo or Graham cracker crusts for desserts, and that is great. I never liked the Jell-O molds with fruit inside as a child, but I am good with it now.

We once tried what sounded like "a good idea" - Putting slips of paper with "fortunes" on them in to little cups of Jello - Yep, "Fortune Jello". It was a mess. Did I mention that this was in the '70s? And.. well....It WAS the '70s.

In a couple of early 1960’s Jell-O corporate issued recipe books I have, vegetable flavors like celery are used to make vegetable and seafood molded salads. I don’t think it went well because by 1972 (the latest edition I have), they’re gone.

Black Cherry and Lime flavors were my favorite. Everytime there was a pot luck at church would make huge bowl of lime jello with a large container of cottage cheese on top and would make 2 9x13 containers. No leftovers thank goodness

While according to the website they have 100 different varieties of jello (gelatin and pudding), nowadays it is hard to find all the flavors. In the Denver market, I looked everywhere for peach Jello. Eventually I was able to find the Walmart Great Value peach gelatin, but had to get closer to Colorado Springs to find it.

I think one one of the best recipes has to be is the poke cakes, the recipe came out in the mid 70s where you can use either pudding or jell-o and now, there are more modern takes on them and, people are putting there own spin on it. I remember jell-o came out first with the recipe and then, not long after they introduced the pudding version take on it. I still love to take my favorite flavor jell-o, (black cherry) with yellow cake. I liked it so much that the first year, I requested it and she made it on several of my birthdays through the yrs, even though, it wasn’t every yr.
