Colors correspond to local gravitational acceleration. The light bending effect is achieved by tracing hyperbolic rays, it isn't an accurate general-relativistic simulation.

The corkscrew pattern of the farthest arm of the accretion disk ead interesting. Was that because of the matter's gravity that was being pulled in pulling on the outer matter slightly as it orbited?

no its because the backside of the star is being launched as the closest part is getting spaghettified. gravity gets weaker the further away an object is.
