I’m getting red, I like the white and black but for me they are to basic and boring and plus I think in my opinion the red looks the cleanest and coolest. So if I where u I would get the red just so u never get bored of it 👍

If your iPhone 8 is still performing good then I would say just keep it. The only difference in the camera seems to be portrait lighting and Smart HDR. While the new SE has a A13, the A11 in the iPhone 8 still is fast
