I use the Italian method it really works for me. I live in a high altitude area and this gives me a stabilized macaron batter. I’ll definitely try the Swiss method it’s always good to have a backup. Your colors are stunning love your videos thank you for sharing 🙏🏽

I love your recipes. They are the only ones that I get right. I made the lemon recipe. Looked and tasted amazing. Could you tell me the brand you used for the gel food coloring, please. Because when I tried the red gel food colouring my merengue turned pink. I used the brand Satin Ice.

Hi thank you so much!!! Im happy you enjoy the recipes! I use americolor. The christmas red is the best for getting a deep red. You will need a lot of it to get a deep color. you can also add a bit of red powder food coloring from the sugar art to help get a deeper color and not have to add so much gel.

Ive tried so many recipes and all the methods as I was learning how to make macarons, and this one was the best for me. It produces a more stable meringue than the French method, which is perfect for beginners, and it has less steps than Italian, I never liked the extra steps in the Italian method.

I made this recipe last night and baked the macarons for 20 minutes. After they cooled and I tried taking them off the silicone mat, some of them got stuck. Should I bake it longer? Other than that they looked perfect

maybe they were under baked, maybe too far from the heat source, or low oven temp, or they were over mixed, or even the amount of food coloring interfered with the baking, it's hard to say without looking at them, or being there during the process, but these are some things to have in mind.

you can use just milk, or add a dash of vinegar to the milk and let it sit for a couple of minutes, it will curdle and become like buttermilk.

Are there any tips for preventing hollow tops of shells? I also use the Swiss meringue method, but I always end up with a slight gap in the upper shell. Everything else is totally fine including the feet, smoothness, etc., so I’m not sure what I’m doing wrong. I love the way yours turn out every time! They’re perfection!

You have to add a lot of color, but also be mindful, if you are a beginner at macarons go slowly and add color once you are more comfortable with working with a "wetter" batter.
