don't have a pellet smoker. I use hard wood. But other than that this is how I make bacon every season but winter at my house. I will make some just like you did and some I stop 1/2 way through the process let it cool and bag it to save back in the fridge. I do about 3 lbs on a Sunday and the first 2 lbs go into a zip lock bag for later. I can finish them in the oven as needed for the next couple of weeks. (or if in a hurry the microwave but I think it tastes better finished in the oven) The last lb I do just as you did up the heat and get the crisp I want. I really like mixing apple wood and Hickory flavors in my bacon. Just a personal preference.

Everytime I go camping, I bring the hickory pellets and the case and smoke bacon on the grill with charcoal. You are right about how different it is!

A great idea is to sneak some bacon in the gaps on the grill while smoking something else much larger and longer like a brisket. It provides motivation to be attentive to the grill. I can't see myself spending 2 hours for only bacon, good as it is.

the oven works pretty good too. But you don't get the smoke like you would on a pellet or hard wood smoker. I have taken some liquid smoke in the winter and a bit of water in a small pan on the lower rack and let it steam off in the winter to get that smoked flavor when I can't get to the smoker due to too much snow and not wanting to be out side more than I have to be. There are other methods I have seen that give better flavor but they are a bit more complected and actually are Smoking meat in a conventional oven. But mine is quick cheep and easy. you just have to play around with how much liquid smoke to water you add to get the smoke flavor to your taste. I use a small nonstick bread pan bout 4 in long 2in wide and 3 caps of liquid smoke to 3/4 the bread pan full of water. Try it if you want or not. Happy eating.

oh... be sure to take the water out before you crank the oven to get the bacon crispy or it will boil off and make a mess.

Not everything happens instantly. Just make a ton of it and it will be worth it.
