Sometimes you just need a sweet treat but that doesn't mean it can't pack a punch! We're doubling up on the protein with non-fat Greek yogurt and peanut butter! The results were amazing. Enjoy!
Reese's Peanut Butter Mousse Cups
Ingredients:
1 c chocolate chips
1 tbsp coconut oil
2 c non-fat Greek yogurt
1 c salted creamy natural peanut butter (we use Kirkland brand)
1/4 c shredded coconut (omit if you don't like coconut)
sea salt
In a small bowl, add chocolate chips and coconut oil and microwave until melted. Give it a good stir.
In another bowl, add Greek yogurt, peanut butter and shredded coconut. Using a spatula, combine until a mousse like consistency is formed.
We are using mini-mason jars. Layer the melted chocolate and peanut butter mousse in the jars by coating the bottom with melted chocolate, followed by the mousse until jars are filled. Finish with melted chocolate and a pinch of sea salt. Refrigerate for a couple of hours before serving.
