@@hyyacinthusa7324 Try milk you like. I would use coconut milk or at least a combination of milks that have enough fat to make the pudding delicious. In the beginning she mentioned that 3% milk is what she had but a richer milk would be even better. I'm going to try mine with a combination of half full coconut milk and half Califia Farms toasted almond/coconut milk because I want the fat and the taste of the toasted almonds. If you try something that works, please share here. Thanks!

I’m Palestinian we make this too it called rouz bi haleeb which translates to rice in milk we add rose water or orange blossom water 🌹🌸 and top with pistachios. My favourite childhood Food.

I don't think that the Canaanites ever actually "left". There's a school of thought that the Phoenicians were actually Canaanites, and the Phoenicians settled around the Mediterranean, including Cyprus. So Cypriot, Lebanese & Palestinian people include "Canaanite" heritage among them.

This looks great! Here in France rice pudding is a staple dessert, and a favourite of mine! Your bahti recipe made me think of a speciality from Normandy called 'teurgoule', which is rice pudding heavily spiced with cinnamon and cooked for hours in a terracotta pot in a low oven... it's amazing to see the similarities between different cultures and parts of the world!

And judging by the other comments listed here, it is exactly for all these reasons and more, that we keep coming back to learn more. I believe that the history of where food comes from, and how it travelled across the globe, is the true history of the people of the world, because that is the only thing we can carry with us, food and our memories of food. My mother is from Spain and I grew up on rice pudding as an afternoon snack. As kids being raised in the United States, I often had to wait for Summer vacation to visit family in Spain to have rice pudding again. I will have to try to make it myself, but this time, successfully with your tips. I might even try a toasted coconut with coconut milk version with a bit of cinnamon and clove for a fun India inspired twist on my original favorite.

In Greece we have a similar recipe, without the baking at the oven part. I am lactose intolerant so I use thick coconut canned milk witch gives a nice twist on the flavour . I also used arborio rice wich is very starchy and has huge grains that grow crazy big! I am very curious what will happen when the coconut milk burns, what can go wrong? Thanks again for the inspiration, I use your shawarma recipe twice a week and every time I say thank you Refika for making my life so easy and tasty! Stay strong, we are on this together! So adding coconut milk in to rice you are making Sri Lankan traditional milk rice but no sugar in it n burning part how good it will be that u have to experiment yourself in our milk rice i love the burnt to golden brown part at the bottom of the pot 😃😃

I just wrote a comment how in Moldova, we also have a similar rice dish, without baking it but boiling with milk and raisins or pear, it is also delicious, I grew eating it as a breakfast, but could easily be a dessert. Adding coconut milk sounds like a delish variation. It's so nice that they're so many variations of this dish, (appart those mentioned in this thread) even the Thai mango sticky rice😋

My friend, almost all of your kitchen is mirrored by us, so I'm not surprised that you were under our rule for 600 years. We used to go to the same markets in the same neighborhoods, on the same streets.In other words, it is normal for you to take our culture, our food and say ours, but it would be more convincing if you put new names instead of adding 'ki' suffix next to Turkish names.

All my family, including my only son, have died, and no traditions were handed down to me - so I work with Sanctuary Kitchen, a local organization of women refugee chefs who are cooking all week, and selling their food online for curbside pickup, at local businesses, and at farmers markets across our town. My Grandmother made this but our remembered creation is more solid and less yummy. It uses rice after it is ground in the blender. Thank you for returning this memory and recipe to us. I’m old now and back in the US these days, but many years ago (probably before all of you were born!) I was in Germany and getting on a train heading east (Istanbul Express!). Shortly after I boarded, a guest worker from Turkey offered me a serving of rice pudding. And truthfully it was the best rice pudding I’d ever had. I have been making it since then but it was never quite the same. Definitely trying your method! All of your recipes are fantastic.

I'm from New Zealand ad I really love your video's. My mother was from Scotland and she use to make us rice pudding when we were young. She would put rice, milk, sugar and sultanas in to a bowl and cook it in the oven for about an hour. She loved the skin on top which was like the burnt skin on yours. She also loved to burn the custard, she thought it tasted like caramel, but we just thought it tasted burnt :-)

I am making this for my Easter (tomorrow 4/7 in the US) ... I'm going to try the pressure cooker version. Refika and all of your team: You bring a lot of joy and love, not just recipes ... to me. How recipes work, your family history, Turkey history and stories ... it all makes for understanding ... everything you said. It nearly made me cry because sometimes it can feel like there is so much meanness in the world and I despair a bit. I am fortunate to live in a beautiful rural area and can get out and walk with my dog in the quiet woods. But, I watch you and several other youTubers that have a similar underlying joy and honestly. AND, I ordered that funnel on Etsy plus a knife and yogurt making pot and towels. I highly recommend Refika's Etsy!!!

Oh ... I received grape molasses from Amazon. I will make a "sourdough" simit for Easter breakfast. I will have no idea if it matches Turkish Simit, but I make bagels (sourdough) regularly so I am fairly sure that the Simit will be delicious.

I made the pressure cooker version (1/2 the recipe) in my Instant Pot ... 2 cups water with an 8 inch corning ware dish inside. Rice and little milk for 1st 12 minutes. Add sugar and rest of the milk ... 15 minutes. Quick release on the first 12, natural release at the end then under broiler (grill) to brown ... then refrigerated for several hours. I LOVE it! I've never had the Turkish version so no idea how it matches, but it is delicious.

In India, we call this Kheer and we skip the oven, from fir to room temperature to refrigerator to my tummy 😇😊

YUMMY I'm from India I love Sütlaç I am in love with Turkish culture but my favorite Turkish dessert has to be Sütlaç. I made Sütlaç 2 times the first time I made it was without the Caramelized topping but the second time I did it with the caramelized topping and it came out so good. I am surely going to make Sütlaç again but this time with your recipe and I know it will come out great. Thank You!

That’s true in Palestine we call this rice pudding dish “ Bahti” usually we eat it in wintertime 😍

Refika, I just wanna say I really admire your passion to introduce our culture to foreigners. I really respect your effort, I hope my comment support your motivation. Greetings from the SÜTLAÇ(rice pudding) country to everyone :) Turkish cuisine is the one of the best in the world, it requires good quality in ingredients, mastery in action(please search for YAPRAK SARMASI/stuffed vine leaves with mince) and different techniques(ottoman cuisine especially for meats). For example, baklava(one of the best known desserts) requires urfa(turkish city) ghee, antep(turkish city) and urfa pistachios and antep chefs with minimum 30 years mastery in baklava. Baklava is just pure love, or what :) We recommend you to search more for our cuisine, because turkish cuisine is the most demanding but most generous cuisine.
