Remaking Mama's Chicken Vegetable Soup For Iftar! | The Ramadan Daily With Aysha Harun

Chicken Vegetable Soup Ingredients (use as much or as little as you desire!)
4 Chicken Breast
4 Medium Carrots
4 Celery Stocks
2 Medium Onions
1 Large Tomato
2 Zucchinis
3 Potatos
2 Cups Butternut Squash
6 Garlic cloves
2 de-seeded Jalapeños
1 cup of red lentils
2-3 boxes of low-sodium chicken or veggie broth (or enough liquid to cover everything - water + bouillon cubes work too)
1/2 cup of GOOD Extra Virgin Olive Oil
2 tbsp Cumin Powder
2 tbsp Corriander Powder
1 tbsp Paprika
1 tbsp turmeric powder
1 tbsp dried oregano
2 tsp black pepper
1-2 tbsp sea salt (to taste)
1 lemon, juiced
Handful of fresh parsley or cilantro
Method:
Chop all your veggies and chicken and add to a pot on medium-high heat. Add olive oil, spices and chicken broth and add enough liquid until veggies/chicken is fully submerged.
Heat until it bubbles and boils, then turn down heat to medium-low, cover and simmer for at least 30 minutes or until chicken is fully cooked and veggies are tender. Squeeze lemon juice into soup.
Using a hand blended / immersion blender, blitz the soup until your desired texture (I like to leave chunks of chicken and veggies in mine for texture).
Top your soup with some more lemon juice and serve hot!
