We just remodeled our bathroom and the plumber that came did exactly what you're saying not to do... I have pictures, he directly attatched the new copper to galvanized pipes.. What should I do?

If you wanted to add a shutoff valve, could you thread a brass valve directly onto the galvanized pipe?

Absolutely

With the proper fitting, of course you can!

Is the only solution for coupling to galvanized at a threaded point? If crap is too frozen to back off the thread do you just cut & rethread the pipe or is there a sharkbite type fitting for coupling galvanized to copper?

Have you tried to heating the thread up until it’s red hot and unscrew while hot? That will usually work, if not yes you’ll need to re-thread.

If you come up with another solution definitely let me know, always willing to learn.

@@arrowheadtileandstone8973there is a galvanized “dresser coupling” that compresses onto a straight galvanized pipe with rubber gaskets. Then you can use a short galvanized nipple on the other side and thread brass, then copper onto that.
