BAHAN REBUS
Ati ampela 7-10 pcs
Bawang putih - 3 siung
Jahe - 4 cm
Lengkuas - 3 cm
Daun jeruk - 7 lembar
Daun salam - 1 lembar
Daun kunyit - 1 lembar
Serai - 1-2 batang
Kaldu bubuk - secukupnya
Garam - secukup nya
BAHAN BALADO
Cabe keriting 250gr
Bawang merah - 10 siung
Tomat merah 2-3 butir
Daun jeruk - 5 lembar
Minyak goreng - secukup nya
Garam - secukup nya
Kaldu bubuk - secukup nya
Mecin - opsional
PROSES PENGGORENGAN
Goreng ati ampela terlebih dahulu
Yg sudah di potong-potong ingga
Matang dan warna kecoklatan
Angkat dan sisihkan
PROSES SELANJUT NYA
Giling/tumbuk cabe, bawang merah
Daun jeruk, iris-iris tomat dan siap kan
Minyak goreng dalam kuali, kemudian
Masukan cabe, tomat dan daun jeruk
Goreng sampai cabe matang dan
Wangi lalu masukan ati ampela yg sudah
Di goreng kedalam sambal dan aduk
Sampai merata, lalu angkat dan sajikan,

Ati gizzard 7-10 pcs
Garlic - 3 cloves
Ginger - 4 cm
Galangal - 3 cm
Orange leaves - 7 pieces
Bay leaf - 1 sheet
Turmeric leaves - 1 sheet
Lemongrass - 1-2 sticks

BALADO MATERIALS
Curly chili 250gr
Shallots - 10 cloves

Orange leaves - 5 pieces
