It's a long time since you wrote that comment, maybe I can still help you out. When you start to aim (raise your weapon) and an enemy attack is coming through, you will automatically dodge. It's easiest with the knife, if you turn your back to the zombie and equip the knife it's much more easy to Emergency Dodge. Watch the feet of the zombies and your feet to get the timing right.
