I made the pumpkin muffins today, and they turned out so good! I made them gluten free by replacing flour with King Arthur's Cup for Cup flour. I cut the recipe in half since I had half a can of pumpkin left over from a pumpkin pasta I made last night. I also added a splash of vanilla extract, and sprinkled a little sugar on top before putting in the oven. It made 8 good sized muffins. I did also make some parchment paper tulip liners for 6 of them...totally not worth the effort. 😂 Thanks for the recipe!

Dear Hilary, I was like you when I was younger and had 3 little ones. I guess I was so busy with everything else that I put my Christmas wrapping off to the last minute- Christmas Eve. The last time I did that was when my precious dad was dying... we were supposed to be with him for his last Christmas Eve, but where was I? In the bedroom trying to get the gifts wrapped!!! I was soooooo furious with myself that I vowed to have all gifts wrapped before the kids got out of school for vacation. That way I had 2 weeks to play and do fun activities with them. I just had to learn to shop earlier and wrap as I bought. God bless you and your littles this Christmas season. 🥰

Another good way to use up turkey left- overs is pot pie. It is such a good comfort food, easy to make and can be done in sections. Make the pie crust. Store in frig at separate time than making the rest of recipe. Plus turkey is already cooked and can either be cut or shredded whichever you prefer. One time I made it with leftover KFC chicken that I took the crust off and cut up. It turned out great.

I am always so surprised when someone says cooking a whole turkey is intimidating. It is a hundred times easier than cutting up a turkey. Just slather it with butter, stuff it or not , S&P and put the whole thing in the oven! That is literally it!!!!! Just check the wrapper for weight and it tells you how long to cook per pound. And , I also saw you had a meat thermometer, so no worries! But then , I am intimidated by your gorgeous homemade bread! That is a skill I need to learn. If we were closer, we could cook together one day and get over our fears!
@OldWorldHome10 ай бұрын
How fun would that be! I mean, you’re absolutely right, I guess I was worried we also wouldn’t eat it all in one sitting. Now that I cut it up I do agree cooking it whole would’ve been easier, if we had a bigger crowd I definitely could do it that way 💛

You shouldn't be intimidated cooking a full turkey. I started cooking them as a very young wife at 23, because my mom was done cooking for the holidays and I took over. It is actually the easiest part of the holiday. I love cooking a full turkey because the leftovers last about 4 days. As long as you have a thermometer, and rub the turkey with butter and herbs, it will do the rest of the work for you. It makes the best sandwiches and also turkey casseroles later.
