Just so everyone can have their minds at ease. This restaurant was closed and the power was turned off. All food was being thrown out by the owners did not want to pay me to do it. All water went into their triple interceptor grease pit and we do use 200-degree water, a surface area cleaner would be out of the question because we would not be able to get a concentrated stream of hot water to melt the grease nor could you maneuver it around the gas hoses which did not have quick connects. What you do not see in this video is the second cleaning with a high alkaline soap/ disinfectant no reason to use soap until all of the grease is gone otherwise you are just wasting product (Money)

Celeste Cre youve never worked in food service have you? Youre a fucking idiot. You cant clean back there with a mop and shit, you literally just have to wait and do it like this once a year more or less. Every restaurant youve ever eaten at looks like this under the ovens and grills.
