I love love love Gyro's so this is perfect for me. I never thought about doing the Tzatziki sauce in the freeze dryer! Im excited to try this.

After watching this, I went to the store, purchased all the ingredients and just finished up and cleaned the kitchen. I tried the marinated/cooked chicken and it was tasty and full of flavor. Letting the chicken cool before adding it to the rest of it already in the freezer. I have a load in the dryer and one ahead of this but by Thursday, I should have a finished project. Thanks for this recipe. It is definitely not the same old thing. All the variety is what it makes it so appealing.

I know most of the commercial freeze dried food I see on the shelf’s is food that I really don’t care for so having a good recipe like this will be nice…of course when I finally get my freeze dryer (impatiently waiting!!) shipped.

Great video, thank you! I can't wait to make this. Avid Armor is great to finish off rehydrating stubborn freeze dried food! Soak freeze dried food in liquid and then making sure there is enough liquid, as shown in video finish the rehydrating by using marinate function on your vacuum sealer!

I almost always use parchment, however for very thick sauces and similar textures, I use silicone

I believe I'm the first to freeze dry Wendy's Strawberry and Chocolate FROSTY . The results were very interesting. I won't make a "spoiler" alert other then strawberry makes for a pretty pink and the texture is nice too. As for the taste and texture when eating? well you should check it out. You're gonna need 2 large (20oz) for one medium tray. I also used the green dividers in the smallest slots. I like to call it my forever FROSTY! LOL

Could you do a video addressing what's normal on ice build up on unit around the gasket. I've done about 5 runs and have water build up. My unit is inside in my spare bedroom

I think it depends on humidity levels in your house. We live in the SW and use an evaporative cooler to cool our house so humidity levels are higher and we get quite a bit of condensation on the outside of the gasket (enough to have to place a rag below it). As far as ice goes, I haven't noticed anything out of the ordinary. Just what is in the drum. We're pretty new to this as well having only done about 15-20 batches. I hope that helps somewhat

Seeing you add the extra water to the sauce reminded me of a question I meant to ask the other day when I was doing up some freeze drying watching your vids. So, here’s the question: is it safe/ok to add extra water to preparations with the expectation that the additional water will be sublimated out during the freeze dry? And if you do this, would you suggest weighing (for your reconstitution calculation) before adding the extra water to get back to the desired consistency? I hope that makes sense. It’s early and I’ve had no coffee…

In most cases, extra water is fine and will give you the same end result just take longer for the cycle.

Do you HAVE to use veggie broth or will bone broth work too? I have everything except the veggie broth and want to try this as soon as the watermelon comes out of the machine.

Gyros is lamb/mutton. You can substitute goat meat. Chicken??? Yuk!!. I'm out!
