very good video. am not sure if you are aware of it but on the top bar just after Show overlays tab is Mesh Edits-only visible when in Edit mode, in this tab there is a re-topology function that will shade your mesh a different color and it wont be visible when you rotate to the back side, I find it very useful.

Yeah, I'm aware of that function, but it gave me some snapping issues that's why I opted not to use it
