For those thinking "Department of Redundancy Department much?" over all the sealing and resealing, you'll quickly go that extra step(s) after a couple pouches rupture during canning, what a mess. Thanks, great info

Hey, do you think I should get a vacuum chamber sealer with a better ceiling bar if I wanted to do this more conveniently? I was about to buy the armor 32 but I am concerned about the ceiling bar possibly being not good enough

Great folks over there! I started with an Avid armor UV32 and now am using a JVR and the JVR is much much more convenient and reliable for retort.

stumbled on your channel. I am a new canner, and have pc, wb and steam bathed. Never heard of retort canning! Your pressure canner is similar to an instant pot. Will an instant pot work? I have two of them. I have a food saver vacuum sealer; and will that work? Why do you use what you use? Thanks for your videos.

Hey Karen ! You might be able to use a Instant pot if it has a canning setting. I use a Gowise USA automatic pressure cooker with the canning settings. They are cheap made in the USA and very effective. AS for Vacuum Seal a Food Saver WILL-NOT work many have tried and all have failed. you will need a chamber vacuum machine like the JVR VAC100 with the retort bar if use my name Wandershirefarm as a coupon code you get $100 off and free shipping.

Is a dedicated pressure CANNER required for the cook cycle or can a more typical pressure cooker be used? I'm guessing a canner is required because it allows you to regulate a specific pressure. Is my assumption correct?

No, Any pressure canner will work. I use a Gowise- USA pressure automatic cooker canner. Many people use just stove top canners. Personally, I find that the automatic ones seem to work better for me. I can just set set and forget. With retort you really want to let it cool very slowly. With an automatic you can just turn it off and walk away.

I am not sure what you mean Lou! I use an automatic pressure cooker that also is a pressure canner. it works great! Watch a few more of my videos and you will see the equipment I use and WHY !

Use salt substitute if you have high blood pressure

I would NOT use salt substitute, the salt is acting as preservative not just a flavoring. If you were concerned about sodium switch to a sea salt instead of a kosher salt like I used. it still will have sodium just less of it. You can also rinse the meat when you reheat it and most of the salt and residual fat will be gone in the rinse.

A similar product is available in your local grocery store and has a shelf life of 18 months. Google Hereford fully cooked taco filling.

Why do you have to use the vacuum, can't you just try and get as much air out and use a hot iron to seal the bags? The sealer is so expensive, Thanks Alan

i believe you totally can. Other people do retort cooking without creating a vacuum, just make sure there's some room inside for food expansion
